Lemongrass Ginger Iced Tea

We had a signature cocktail at our wedding. It was a Lemongrass Gingertini. It was FANCY! I’ve always wanted to make it at home and was delighted that the base of this drink comes pretty close! If I grated fresh ginger, added vodka & rimmed a martini glass with chunky sugar, then we would have it!

So yeah this recipe is a really good base. I say base because it’s SOO sweet & fragrant. It’s definitely concentrated! I diluted my drink with sparkling water because I wanted bubbles and I don’t really like drinking sugary drinks. If you want to drink it on its own, I suggest reducing the amount of sugar! The lemongrass gives a nice punchy pow & the ginger adds a warm spice. It’s super tasty.

Feel free to add some spirits up in. Gin or vodka would totally be buds with this tea. Casey threw in some gin last night and LOVED it. It might be fun to make some ice cubes out of this tea and pop them into your water throughout the day.  Wow, clever me. I’m gonna go do that now….

Let’s get started!!

Chop up a stalk of lemongrass. My Whole Foods FINALLY got some in. This stalk was like 35 cents. I think that’s the cheapest thing in the store. No joke!

Slice up some ginger.

Get 5 green tea bags ready.

Put sugar, ginger, lemongrass & water in a pot.

BOIL!

Then add your tea bags. I wrapped mine around a chopstick so i didn’t have to fish them out later.

Steep the tea for about 4-5 minutes. Longer if you want it stronger. That rhymes!

After you take the tea bags out, let the tea cool. Then strain it!

Put it in a container and put it in the fridge to cool!

I took out a jar, added some ice and poured in some bubbly water.

I added about a half cup of the tea to my glass.

Tada! Lemongrass Ginger Iced Tea.

Lemongrass Ginger Iced Tea

(recipe via Sunset Magazine)

  • 1/2 cup sugar (reduce amount if you want)
  • 7 thin slices fresh ginger
  • 1 stalk lemongrass
  • 5 green tea bags
  • 5 cups water

Rinse stalk of fresh lemon grass, cut into 2 inch lengths and crush with the flat side of a large knife. In a large pan, add the water, lemon grass, ginger & sugar. Bring to a boil. Take off the heat and add green tea into the water; let steep for 4 minutes or until flavor is as strong as you like. Discard the tea bags; let tea cool, about 30 minutes. Cover & chill until cold, at least 2 hours. Pour into glasses and fill with ice.
