Actually I made the sweet potato & chipotle soup that you tried from Everyday Food, but with butternut squash instead, and it was excellent.

Wonderful. I’ve been digging butternut squash soup lately. Though I had a new discovery yesterday: pumpkin curry! Very similar to yours actually. And that salad is making me drool (I’m a glutton for kale).

Mmm…I wish I had someone to cook these things for me…because after my one attempt at cooking with fresh, whole squash, I decided that cutting that thing up was too much work to ever do again! even if it WAS delicious…
well, how dang handy! with 7 (!) butternut leering at me from my pantry, this is about exactly what i need!
