Lunch Ideas- ROUND TWO!

Hi! It’s time to clear out my cell phone, so welcome to Round Two of my Lunch Ideas for work!

If you are new to this, you should check out Round ONE!

Let’s begin!

On this day at work, I brought some some leftover chicken & kale noodle soup with an orange. The next day I added a few dashes of hot sauce, chunks of avocado & cilantro and it turned into a Mexican themed lunch! Olé!!


Leftovers! Pan-browned Cannellini Beans with Kale- inspired by 101 cookbooks. (with an apple)

Leftovers! Mexican Chicken Soup with lentils, avocado & my Killer Garlic Bread.  I brought some of the garlic spread in a Tupperware container and spread it on top of my toast when it came out of the toaster.

Leftovers! Nut Stuffed Delicata Squash. So hearty. One will fill you up til dinner!!

Roasted Vegetables!! A huge LOAD of them!  Mix up includes: broccoli, zucchini, red peppers, garlic cloves, onions & sweet potatoes. I added a bit of Parmesan to the top. Scrumptious!

Mexican Inspired Soup with avocado and a side salad from Trader Joe’s. I love soup & salad for lunch.

I heated up a lean cuisine (yup! I eat them), put it on a plate with a side of mashed butternut squash leftovers. If you put it on a plate, you’ll feel much better about eating a frozen meal. Guaranteed.

Speaking of frozen meals, here’s an Indian frozen dinner with spinach, rice & lentils that I heated up. I added avocado & bell peppers to round it out. Always bring additions!

A big salad with corn, black beans, cabbage & carrot shreds with a very light southwestern dressing. I added Trader Joe’s Red Pepper Soup and a side of blueberries & strawberries for dessert.

Leftovers! Chinese Chicken Salad with a side of toast.

Leftovers! Tex Mex Enchiladas. This particular version has ground turkey instead of beef & I added sweet potato puree to the sauce! Spicy and a tad bit sweet. Strawberries & blueberries for dessert.

I made a pasta salad with tomatoes, corn, basil & avocado. Celery & carrots on the side. Can you tell I ate this during warmer weather? How I miss flip flops right now.

On this day I got a salad from a salad bar. It has a bunch of my favorites (walnuts, garbanzos, beets, edamame & kidney beans). I added some tabbouleh to the side to make it extra herby. It’s important to mix things up and try new things or you’ll get BORED. P.S—- I love dutch crunch rolls!

Leftover Broccoli Cheddar Soup with croutons and a side salad from Trader Joe’s. Trader Joe’s has a really good Italian salad with beans, red peppers, carrots & Parmesan. It’s my favorite.

Leftover Sausage Soup, apples & a hunk of bread. I could eat this for days. Knowing me, I probably have.

Carnival Slaw!! A bag of red, orange & yellow peppers and fiber bar for dessert! This is a fiber packed meal! WHOA. Fiber is good. I also can’t wait to wear these shoes again.

Mushroom Lemon Orzo salad with spinach. A cup of Trader Joe’s Tomato Roasted Red Pepper Soup and a fruit salad (grapes, nectarines & blueberries). With a side of flip flops…..

Enchilada face!!!!!!!!! RAWR. It’s important to have a sense of humor when frozen enchiladas are involved. Bring your own avocado! Hot sauce is good too! Except you need to be careful with hot sauce at work. In three days I had half of my bottle disappear from the fridge. Protect your precious commodity!

Leftover Couscous with Chard, Feta & Raisins & Trader Joe’s Tomato Roasted Red Pepper Soup The couscous was really good cold! Good proteins, veggies & carbs.

Vegetable Minestrone (this concoction had lots of cabbage in it) green apples & bread.

And here’s a little concoction I made for lunch at home. Sauteed mushrooms, hummus & avocado on toasted wheat bread with a side of apples! It was gooooooood!!
