Pear Cranberry Walnut Bread

makes 10-12 servings

Preheat oven to 350F. Grease a 9×5 inch (8-cup) loaf pan and set aside. Whisk the flour, sugar, baking soda, salt, cinnamon and nutmeg together in a small bowl. In a large bowl, whisk together egg, oil, vanilla, lemon zest, lemon juice and grated pears. Add the flour mixture to the wet mixture until three quarters of the dry ingredients are moistened. Add walnuts and cranberries and gently fold until all dry ingredients are moistened. Scrape batter into prepared loaf pan and bake until a toothpick inserted into the center comes out clean, 1 hour 15 minutes to 1 hour 20 minutes. Let cool in the pan on a rack for 5-10 minutes before unmolding to cool completely on a rack.
