Cottage Cheese Pancakes

As a mom of a picky eater, it’s an amazing feeling when I try a new recipe and my kid not only eats it, but asks for seconds.

These three pancakes, although not super pretty, were demolished in less than three minutes by Cooper.

That pancake at the top with the raisin face? Gone in like 2.5 seconds.

If he devours these pancakes this fast at almost 4 years old,  I’m in for it when he hits his teenage years.

We might have to buy a cow! Yup. I’m already planning ahead.

A little bit about this recipe. It comes from my friend Catherine’s new book, The Weelicious Cookbook. Have you been to the Weelicious website? It’s a gold mine for busy moms & families. When Cooper was almost 2, I remember searching online for kid-friendly recipes and found a jackpot of photos of Catherine’s son Kenya’s school lunches. Ever since then, I was hooked. Fast forward a few years and I actually met/had dinner with Catherine and we instantly hit it off. This woman is INCREDIBLE.  Not only is she a culinary inspiration, she’s a hard working mom with a passion for food & family. She just oozes positivity and I love that in a person. Go ahead, watch one of her videos and you’ll see what I mean.

The Weelicious Cookbook is filled with so many great recipes for the whole family.  If you’re in a food rut with feeding your family (I know I am!), it will be your savior. Recipes like Mexican Lasagna, Bacon & Cheese Waffles, Chicken Taquitos, Chicken Satay Burgers & Baked Zucchini Coins have left me excited to cook new things for my little family.

I feel renewed and refreshed! It’s a nice reminder that food can be fun and interactive.

Thank heavens for that.

 

And we’re off!

Ingredient gathering. There’s not much involved.

Don’t you love that on a Saturday morning when you haven’t even finished your first cup of coffee?

Cooper was curious about the cottage cheese. He didn’t want to try it on its own.

I didn’t actually like cottage cheese until I was like 25. Casey introduced it to me with wheat germ & honey.

That’s how I like to eat it.

Flour, baking powder & salt go into a bowl. Whisk it up to prevent clumps.

All the wet stuff goes into a bowl.

And we have a batter. I had larger curd cottage cheese. I bet small curd would be great too.

Put the batter on a hot griddle. Drink your coffee. Set the table. Flip. Pancakes are done.

Look at this face. Who is excited for pancakes? COOPER!

Who is about to nag me for a straw? Cooper!

His fingers have to poke something the second I put food in front of his face.

Hmmm. I think I might need to cut these.

He insists that he can cut them himself! Sheesh.

“How many pancakes do I have now, Mama? Furteen!”

(that’s how he says 13)

“Can I have more please?? I want the next pancake to be shaped like a rocket ship!”

Uhhh. Ok?

These pancakes are light & fluffy. They’re a little crepe-like and kinda resemble a dutch baby pancake.

As you can see, they were a real hit! In total, Cooper ate 4 1/2. That’s pretty amazing.

I always loved my mom’s macaroni & cheese and her meatloaf was out-of-this-world fantastic.

Cottage Cheese Pancakes

makes 18-20 small pancakes

(recipe from The Weelicious Cookbook )

  • 3 eggs
  • 1 cup cottage cheese
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey or agave syrup
  • 1/2 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • butter, oil or oil spray

Place the first 4 ingredients in a bowl and whisk.

In a separate bowl whisk the dry ingredients.

Pour the dry mixture into the wet mixture and stir until just combined.

Heat a large sauté pan or griddle over medium heat, lightly coat with oil or butter and pour about 1 tbsp of the mixture onto the griddle for each pancake.

Cook for 2 minutes on each side or until pancakes are set and golden.

    I think one of my favorite things my mom made when I was little was egg drop soup… boy did I guzzle some of that. She would also make a sheet of eggs in her wok before making fried rice and then she would roll it up and slice into long egg strings that I loved to steal from the cutting board.

    My favourite childhood meal and still one of my favourites is my mum’s vegetable soup. It’s always chock full of seasonal vegetables, herbs and spices. The only thing that makes it better is fresh bread with a smear of butter. Delicious!

    This might be kinda weird but whenever my mom asked me what I wanted to eat, I would alway ask for her roast beef dinner! Her roast beef was made in a mushroom sauce that was soo good it just melted in your mouth. Served with mashed potatoes and cherry sauce! The sauce was thick, kinda sweet and tart and almost like cranberry sauce but soo much better! I would put it on top of the mashed potatoes and the roast beef! Delish!

    My mom is a great cook so it is difficult to chose and try to explain/translate some of the recipes I adore. Slow cooked Cow’s tongue, chicken gizzards, Blue mussels, snails hmmm so many. I guess I disgusted everyone reading this by now!
    But of all the things my favourite, and the one that I would always remember my mom by is her chocolate sheet cake, with walnuts and chocolate ganache frosting. Yummmmm

    My favourite childhood meal were indeed pancakes 😀 Well, the Austrian version that is, a mix between the fluffy American pancake and the thin French crepe.

    Marinated Flank Steak, Roasted Potatoes, and sauteed Bacon and Brussel Sprouts. And now, 27 years later, I STILL ask for this for my birthday dinner! Funny story though, the original recipe for the marinated flank steak came from the first wife of my biological father – My mom actually got on the phone and asked herself! Isn’t it strange how family traditions begin? 🙂

    I hate cottage cheese, but recently tried it again as an adult to see if my tastes had changed. Nope. Still disgusting to me. Now, I have a tub of it in the fridge, so maybe I’ll try it in the pancakes though!

    One of my favorite childhood meals was beanie weanies. Just hot dogs and a can of baked beans. My mom always doctored it up though with BBQ sauce 🙂

    It’s so funny because my dad did a big majority of the cooking in my house growing up and having had a southern mom he made all kinds of stuff, but I know our favorite had to be biscuits and chocolate gravy.

He spends one weekend a month with me and he is SO frustratingly picky!! Someone has him hooked on Eggo waffles and I just can’t support that.     When I think of dinners growing up, I go straight to the holidays. My mom was/is always the host and cook for our big family EVERY holiday. Sweet potato casserole and her deviled eggs are always my favorite.

    we called it “jeanie casserole” after my mom’s best friend who introduced us to it. But it was a pound of ground beef, can of tomato sauce, corn and mac and cheese. It’s super easy, quick and tasty and always takes me back home!

    These look wonderful! I’ve never thought to add cottage cheese to pancakes. Have you ever added a few tablespoons to 2-3 scrambled eggs? The cottage cheese actually melts and creates a nice creaminess! [just be sure to drain the cottage cheese liquid ;)] Cooper’s face says it all!

    I loved, and still love, cinnamon sugar toast! I also went cuckoo bananas for a dish my mom made that was diced potatoes, cheese sauce, and ham. She sprinkled cheddar cheese over the top and baked it. YUM!

    My mom would make these incredible muffins with leftover cereal (we ate bran and whole grain type of cereals, not the super sugary kind). I don’t know how she did it because she never used a recipe, but every time they were absolutely delicious. Thinking about all the times I ate one (or three) in our breakfast nook or found one packed in my lunch, it makes my heart all warm and fuzzy. 🙂

    My favourite meal as a kid, and I would devour it today if my mom made it for me… ground beef mixed with broccoli and mushroom soup (as the sauce) over white rice. Sounds a little weird but man would I gobble that up!!!

    My Mom made EVERYTHING from scratch when I was growing up… I loved it all from homemade buns, her beef stew, cabbage rolls, chicken soup, jams and deserts. My FAVORITE was when we had breakfast for dinner and she would make either crepes which she rolled up with cottage cheese inside and served with a sweet cream sauce or big Belgium waffles which she served with homemade warm vanilla pudding sauce and a cooked fruit sauce usually made from blueberries or strawberries- YUM!

    The meals that stand out most from my childhood are all hot breakfasts before school on chilly mornings… delicious oatmeal with butter and brown sugar, classic Cream of Wheat, or pancakes. I’m still a sucker for a tasty breakfast!

    I always loved my mom’s Ochazuke. It’s a Japanese quick-dish… basically a bowl of rice with green tea poured on top! When my dad was working late, my mom took the opportunity to make Ochazuke for my siblings and I (green tea in hers, hot water in ours… can’t caffein-ate a bunch of little kids at dinner time!) She made it with rice, hot water, seaweed, “eggies” (scrambled eggs with soy sauce and sugar) and cut up hot dogs! We went mad for it when she made it! oh mama, and your ochazuke.

    I’m from Brazil, I moved here when I was 12. So my favorite meal will be a little different from everybody. White rice, red kidney beans, squash cut into cubes (then I mashed it and mixed with everything else), ground beef, tomato slices and lettuce.

    There are too many, so I’ll do one for each meal:-) Breakfast: cream of wheat with brown sugar – I liked to play with the way the sugar swirled as it melted into my creamy breakfast. Lunch: PB & honey – I always loved the way the honey was crystallized and crunchy by the time I got to raid my lunch box. Dinner: spaghetti and meatballs – noodles are just too fun to eat when you’re a kid!

    I grew up eating Indian food so I’d say something that was a nostalgic childhood meal would be rice that my mom would pre-mix with a lentils and roll into balls. It sounds weird but it was so fun to eat with your hands!

    Pancakes for sure! I will always remember the day Mom cracked open her 1960’s Betty Crocker cookbook and made buttermilk pancakes from scratch for the first time. It was all boxed mixes until then. Totally life changing. She separated the egg whites and they were fluffy good with a hint of vanilla extract. Changed my life. I realized scratch was the way to go in all things.

    My favorite dish from my mom was chicken stew and dumplings and she also makes killer rice krispie bars (the kind with peanut butter instead of marshmallows). My dad would bust out grilled peanut butter sandwiches (with bananas if he was feeling fancy). He also occasionally made us Uncle Buck pancakes…the kind where it’s one giant pancake that he would flip and cut into four. Silly dad!

Anyway, my favorite childhood recipe is Baked Pineapple. This was served for major holidays and family gatherings. My Grandmother always made it. My Mom still makes it. A pineapplish version of cranberry sauce…sort of. Yum.

    I’m so fortunate to have a mom who’s a great cook, and who has lived abroad, so we had quite the variety of meals when I was a kid. however, I’d have to say that my all-time favorite was (and is) my mom’s stuffing recipe. she clipped it from a newspaper ages ago, and it’s the only stuffing that tastes “right” to me. thankfully, I have it saved as an electronic file now–definitely one of my most precious possessions. 🙂

She also makes a mean grilled cheese and tomato soup. So simple but so much better when mom makes it.

    I’d have to say my favorite recipe growing up was my mom’s mini meatloaves. They are basically meatloaves in patty form with a tomato soup based sauce. My mom knew I loved it so much that she made sure it was included in a church cookbook so I could always have the recipe. I actually made them again for my In-laws a few months ago and it was a HUGE hit. I would even go as far to say that they are now one of my kids’ favorite foods too!
    Comfort food is so comforting!

Busy Day Steak (which is round steak baked in gravy cooked on low for like 4 hours)and my Auntie Rene’s chicken legs (which is just chicken legs brushed with melted butter, and sprinkled with seasoned salt and then baked to perfection with a little extra butter in the pan, beware this recipe can create a messy oven from the butter splatter). Now my kids love these recipes!

    Tracy, I just made this pancakes, and holy WOW they are AMAZING. I’m usually not a big pancake person, but I just spent the day talking about breakfast and needed some breakfast for dinner!     When I was little, we would go visit my great aunt in Pennsylvania and she would always make the same meal – hamloaf, scalloped potatoes, and jello salad. I remember this because it was SO GOOD except for the jello salad which was straight up bag of salad mixed into jello – chill and serve. It was horrific. My mom used to let us dump it out when my great aunt left the kitchen. It’s the only thing that I was ever allowed to not eat/try on my plate every time. Ick!

Everytime I went over to stay at her place, she allowed me into the kitchen with her to smell, touch, watch (something my mom never allowed because I was a meddly little girl… haha). She would always ask me what I wanted to eat for dinner and every time (because we are Chinese) it would be chicken and potato stew and steamed tri-egg custard with minced pork. All these eaten with rice and some stirfried veg. She would make these and when we were really young, feed us. When I think of childhood, I think of her. I really miss her very much.

    I often wonder how my cooking will change when we have a family. I bet this book would go a long ways toward making me less apprehensive.

    When I was a kid, it was a special dinner when Dad made tacos! He fried the taco shells (and tostada shells, for me), and we had seasoned beef or chicken, beans, and all the awesome fixings.

    I was wondering why there were so many comments on this post, and now I understand! My mom is an amazing cook so it’s so hard to choose my favorite meal! Something I still request when I go home to visit is ham with mashed cheese potatoes and peas, so yummy! and a favorite childhood snack (only because it’s stuck in my head now!) is Welsh cakes. They’re little fried orange and cinnamon flavored biscuits. The entire batch never lasted more than an hour our two 🙂

    Bologna Hats! My mom would put slices of bologna (baloney? maybe we spell things differently in Canada) on a cookie sheet and brush them with a mix of equal parts brown sugar and yellow mustard. She’d bake them until the middles popped up like little hats and serve them with mashed potatoes. I’ve never found anyone who’s ever heard of them – they must be so white trash – but they were awesome and whatever made them pop up all so perfectly I’ll never know!

    There are many to choose from, but I may feel most nostalgic about my mom’s homemade macaroni and cheese baked with sliced hot dogs (in an old school cornflower Pyrex baking dish). It was crusty and cheesy and wonderful. My dad wasn’t so keen on it, so it was usually something she’d make when he was out of town. Those rare dinners of macaroni and cheese with hot dogs felt special and vaguely conspiratorial, which made me love them, and my mom, all the more. Damn, now I’m getting all misty-eyed. Move along, nothing to see here.

    I loved french toast my mom made for me. Sprinkle with sugar on the top. Nothing was fancy, but it was heaven.

    My favorite was titled “special milk” I actually hated milk so this was the only way I would drink it and then of course I guzzled it down. Add a few drops of vanilla extract and a small spoon of sugar to a glass of milk and voila! Is that weird? Sure it is, but I was a kid, what did I know?

    Roasted pork roast and sauerkraut! My Mom makes the best! It’s a throwback to her Pennsylvania Dutch heritage. And for dessert … it had to be her Shoofly Pie! These wonderful dishes that my Mom prepares are a wonderful tradition that we all love.

    My favorite childhood meal was make your own pita nights! My mom would lay out every veggie imaginable, and let us stuff them into our own pita pockets then cover them in salad dressing! Not only were they delicious, but it was fun to feel like we helped make dinner 🙂

    It’s hard to choose one favorite childhood meal… but one of my favorites that I’ve been craving this week is salmon patties with scrambled eggs and fried potatoes. Yum!!! Oh, and chocolate milk to drink 🙂

    My mom’s gingersnaps! They were my favorite during the holidays and she gave me the recipe so I started making them for my family too. Also, she made really good German pancakes with lemon and butter– you know the kind I’m talking about? The HUGE ones!? My eyes always got so wide when I saw those come out of the oven…

    Gah! I hope I’m not too late! My favorite childhood food memory is making real french toast with leftover challah bread (and real canadian maple syrup) with my siblings on sunday morning. We made them as a surprise for my mom, dad, and for a cousin who was in from out of town, and they were so surprised! And we were so excited!
    And, as always, they were the best french-toasts ever!
