Berries + Coconut Milk

I had a little coconut milk leftover from the waffles this weekend, so I put it to good use with this simple snack. Last night I had a SUPER craving for sugar. I learned that if I eat anything that has onions in it, my brain is like YOU NEED SUGAR RIGHT NOW. It’s weird. Instead of dipping into some ice cream,  I put some berries in a bowl, drizzled some coconut milk on top (it was unsweetened). I finished it off with a little sprinkle of coconut on top. It’s so good!  I had it again for breakfast this morning but added a banana and a little drizzle of agave syrup on top. It’s kind of my new favorite thing.

    Yum…I’m going to try this, thanks! I’ve been using unsweetened coconut milk in smoothies. For breakfast I had a smoothie with coconut milk, banana, ice, and PB2. Have you ever had PB2? It’s powdered peanut butter – perfect for smoothies!

    Yum! This looks and sounds delicious! I love a good alternative to ice cream whenever my brain does the same thing. Usually if I have anything with onion or garlic in it, that’s when I’m like SUGARRRR!!! haha.

    I never would have thought to do this, but what a great idea! Whenever I think coconut milk, I instinctively assume all I will make is a Thai curry, but this is a fantastic alternative!

      I used canned. I didn’t know you could get it in a carton. I only knew coconut water to be in a carton. Cool!
