Carrots + Peanut Butter

When I first had carrots & peanut butter, I was hanging out at my friend Julia’s apartment in San Francisco. We had just finished class at art school and she was cooking us dinner. She’s the one that taught me about kale (THANK YOU, JULIA! I am forever grateful) and when I saw her dip a carrot in a jar of peanut butter, I was like WHAAAAAAAT just happened? I’d only known celery, apples and bananas to be sufficient mates to peanut butter. But, carrots?!  So, I tried it and really liked it and have been having it as a snack ever since.  If you don’t go the baby carrot route, you can easily dip a carrot straight into the jar… If you’re gonna double dip…then make sure no one is looking?  I hope you like the combo too (if you haven’t tried it!). The carrots add a nice sweetness and crunch to the peanut butter. I’ve been known to substitute PB with sunflower seed butter. Just as good!

    Smear carrot with peanut butter and add a few raisins! Roll peanut butter in a crunchy cereal or granola for a carrot crunch snack! If you are feeling really crazy, garlic salt and a bit of ginger ( So GOOD) I kind of am obsessed with peanut butter(almond butter too) and carrots. The combinations are endless! PS. I am all about a big carrot..and a double dip!

    OMG! this was the ONLY way my parents could get me to eat carrots as a kid! No one ever gets it, but then they taste it and then they’re like, OH SNAP, I GET IT.

    I love this combo too! For me the carrot becomes a tool to get peanut butter into my face hole! Peanut butter for days! Such a simple crunchy treat. You gotta try it…

    WOAH i dont know if i can wrap my head around this. Carrots and peanutbutter? I know it shouldnt seem like a big jump from celery but somehow it is! Be brave, shelly, be brave.

    Wait… I’ve never had this before! You can be sure I’m going to be dunking my carrots in peanut butter this afternoon. Actually I’ll dunk pretty much anything in PB 🙂

    My family also did PB & carrots, but our favorite was PB on summer sausage (or landjaeger, if you can find it). Not exactly diet friendly, but a great sweet & salty combo!

    this combo was a big hit at my daycare center when I was teenytiny and I’ve eaten since. You do definitely get some weird looks from people who have never had it before though.

    I saw my boyfriend do this recently and had the same reaction! I still haven’t tried it. I’ve been told I have different food combos before; red wine vinegar on pizza, salt on apples, the list goes on. haha. Ill have to give this a try.

    Try shredded carrots, chopped onions, and peanut butter. Good on sturdy bread or in a pita or on crackers or just eat it with a spoon…. If you like something very smooth as a dip, you can blend it although I prefer the coarser toss things together approach. I like a lot of carrot so it takes a little bit of effort to try to coat with a reasonable amount of peanut butter but worth it. Gloppy peanut butter is easier but any will do. You also can just add the carrots and onion to peanut butter spread on bread. I like to cut shredded carrots that are long strings into short ones but that’s optional. Good with the broccoli slaw mixes sold in bags as well instead of carrots or in addition to them. I cut those shorter with a kitchen shear also. Works well also with sunflower seed butter or almond butter or really any nut or seed butter.

    And of course peanut butter and pickle sandwiches…. Any type of pickle. I’ve used dill pickle, hamburger chips, sweet pickles sliced, etc. I have been known to skip the bread…. Good on crackers also. Either top crackers with slices of pickle or chop and mix.

    Also any kind of lettuce is good in peanut, nut, or seed butter sandwiches. Pile it on. Also try cabbage leaves instead of lettuce.

    Plus try mixing peanut etc. butter with a bowl of broccoli slaw as a salad dressing. There must be suggestions on the net for how to dilute it with something to make it cover more easily (peanut sauce is a real thing), but gloppy butters are fine by themselves.
