Here’s one of my favorite snacks lately. I’ve actually been enjoying it for breakfast! Trader Joe’s has this really amazing thick cinnamon raisin bread that I’m obsessed with right now. I top it with coconut butter (sometimes I toast the bread) a few slices of banana and a sprinkle of cinnamon to finish it off. It’s a fantastic option for those times when you really really want a cinnamon roll but you don’t want to leave the house and….you can’t be trusted with a pan full of fresh cinnamon rolls….

    Oh the memories!! I ate an incredible amount of bread with coconut butter while I studied for my bar exam a year and half ago. It was my brain-food. My physical, mental, and emotional fuel. (and I passed the bar exam, so there, that’s the scientific proof that this is good stuff) I just pressed raisins on top of the bread+coconut butter, but I would have loved to have used cinnamon raisin bread!

    This sounds amazing – great alternative to a cinnamon roll and ready in under 5 minutes! I always go for a banana, nut butter, honey and a few crushed walnuts kinda situation!

    Thank you so much for posting your coconut butter recipe! I’ve been trying to find Coconut butter for so long and only have come across super expensive coconut oils.
