Meal Prep for this week! I made two loaves of banana bread, mexican soup & reset button salad.

And chopped vegetables, roasted cashews, turmeric tea, enchilada leftovers, ginger syrup, roasted delicata & sliced oranges.

    Seeing that mild rain makes me SO jealous! We’re happy to hit 20 degrees around here (MN). Makes me wish I lived somewhere not so wintery… just because I spend so much of my year waiting for nice weather. Life is too short for that! (P.S. Always enjoy these posts :))

    Have you ever tried making your enchiladas w corn tortillas? I live in Texas, the land of Tex Mex and I know Mexican food is a regional thing, but we make them with corn tortillas. Highly suggest it:). I want to send you my family’s recipe for red sauce from scratch, which starts w dried red chiles. It’s just hard b/c there is no set recipe, everyone does it by memory. I love this series of yours and your photos, it reminds me to notice the simple things.

    Love this post as it makes me reflect on my own week and realize how much we accomplish… Great photos – my fav, of course, is “cuddle time” with your precious baby as my baby went to his first winter formal this past weekend.
