    Yay Instanpot! Looking forward to some recipes from you. Got mine during Amazon Prime day and love it. Fair warning though you’ll likely have to do a bit of research and maybe trial and error to get comfortable with it (it’s kind of a beast huh? Don’t be intimidated though). The booklet that comes with it is helpful with cooking times but is garbage for recipes…some just weird. You’ll have to scour the internet for recipes and even then you’ll find some wildly differing cooking times (you’ll figure it out quickly). Some of my favs that I’ve made so far are daal, chicken teriyaki with broccoli, chicken soup, pot roast and chicken wings which were a huge hit with the guys in my house (10 minutes in the instantpot then finished off with bbq/wing sauce in the oven). Love that this thing doubles as a slow cooker so I could lose (donate) my crockpot. I recommend skinnytaste and pressurecookingtoday sites as great starting resources for instant pot recipes. The only other caveat I would add is make sure you have your pot situated away from cabinets and in a well ventilated area because when you release pressure that steam can cause cooking smells to linger in your house.     I’m with Karen: can’t wait to hear about Instant Pot… I’ve started to see recipes posted by other bloggers and I’ve very intrigued but not ready to pull the trigger on a purchase yet. 🙂

    I just made your grain-free oatmeal in my instant pot, and it turned out perfect! I feel like there is going to be some trial and error with cooking times, but I’m really excited to use it. Can’t wait to see what you make with yours. Happy New Year Tracy!

        I just put all the ingredients in the pot, reduced the water to 1 cup, and cooked it for 3 minutes on the porridge setting (figured it was close enough). After it cooked I left it in there for 10 minutes then released the pressure. I used the immersion blender and it came out really well!

Read the pinned posts for quick reference to acronyms like QR, NPR, PiP etc. My fav thing is the ability to make yogurt! Someone posted the ‘recipe’ for Lobsters. 4 mins. Mind=blown!
