I use my Instant Pot for a few things.

Hard boiled eggs (omg the shell comes off so easily)

Apple sauce (because we always have leftover apples and I love making applesauce)

Chicken Broth (with bones I stash in the freezer- that sounds creepy!)

Pulled Pork (tacos & pulled pork sandwiches)

I made rice a few times but cannot give up my rice cooker. The rice stuck to the bottom a few times and that’s enough for me to not try that again. If you have any tips that don’t include putting a ton of oil in the rice, I am all ears.

I experimented with chicken wings once and the meat was so tender that they became boneless chicken wings.

I thought that with the month being all St. Patrick’s Day, it would be good to throw some cabbage in the recipe rotation. We never really have it, so I thought I’d try something new and branch out from my Instant Pot ways.

My only addition is a little goat cheese on top. I used to have the braised cabbage at Hillstone (Houston’s) on the Farmer’s Market plate (anyone?) and could never get enough of it. Now I can make at home!

In goes the cabbage and apple. I didn’t have a granny smith like the recipe required.

Granny Smith will add extra tartness. Use one!

Instant Pot Sweet & Sour Cabbage

 

serves 6

recipe from The Essential Instant Pot Cookbook

  • 2 tablespoons unsalted butter
  • 1 small red cabbage (about 2 lbs.), cored and chopped
  • 1 large Granny smith apple, peeled and diced
  • 3/4 cup chicken broth (or vegetable broth)
  • 1 tablespoon honey
  • 1 tablespoon cider vinegar
  • 1 teaspoon kosher salt
  • crumbled goat cheese, for serving

Select the Sauté setting on the Instant pot and melt the butter. Stir in the cabbage and apple, coating them with the butter. Add the broth, honey, vinegar, and salt and stir well.

Secure the lid and set the Pressure Release to Sealing. Press the Cancel button to reset the cooking program, then select the Steam setting and set the cooking time to 3 minutes at high pressure.

Perform a quick release by moving the Pressure Release to Venting. Open the pot, give the cabbage a final stir and serve warm.

    I have yet to hear anyone who actually owns a rice cooker say that they love the Instant Pot more or even equally for rice. No matter how I tried, the grains never came out as fluffy as my rice cooker, so now I just have both and view the IP as an upgrade over my slow cooker that I got rid of.
    The three main things I use mine for:
    – chicken broth (I keep chicken feet in my freezer. Creepy surprise for freezer snoops)
    – chickpeas for homemade hummus
    – steaming Japanese white sweet potatoes for breakfast! I mash them up, portion them out, and reheat them in the morning with coconut milk and cinnamon, top with crunchy almond butter and thawed frozen berries. HEAVEN.

      I love the sound of that breakfast! How do you cook the sweet potatoes in the IP? Whole? On the steamer rack?

        Whole, stabbed a few times with a fork or knife, on the steamer rack. I put a cup of water in the bottom and cook for about 30 minutes and quick release before testing, then add more time in 5 minute increments as needed.
        My husband was soooooo skeptical the first time I made the breakfast and now he’s every bit as obsessed as I am.

    I’ve had the SAME hit and miss experience with mine! I did potatoes and eggs allll summer long. I used it in place of a saute pan quite a few times when things were especially toasty here in N. Idaho (it beat turning on the stove and heating the house up).

    I have one standby recipe now (chicken and dumplings), so I’m stillll looking for ways to make it earn its keep. I’m basically terrified of messing an entire meal up because it took way longer than it was supposed to or just didn’t turn out right.

    Keep sharing your successes! I need ideas and courage! 😀

    So far I LOVE to do eggs, haven’t tried rice, WILL try this cabbage, and have made an easy Chicken Chili Verde several times. Also a really great split pea soup, a loaded cauliflower soup (tastes like baked potato soup without all the carbs), an excellent lentil soup, and a so-so black bean soup that had great flavor but my beans were ancient so I didn’t like their texture so much. My friend makes meatloaf and potatoes and also ribs in hers. I have yet to find the right place to store the beast so it’s off my counter top, but I have plans to make a wild rice soup tonight so that will have to wait. = )

    Aaah! YES. Homemade hummus is a revelation (and really all homemade beans in the instant pot). Can you tell me more about how you do the sweet potatoes? Do you put them in whole on the little steamer rack? Or slice em up or what? I love the sound of that breakfast!

    a lot of people swear by the whole pot in pot cooking method for rice to avoid the sticking issue, but i havent tried mostly because i agree that nothing beats a rice cooker.

    Ever since I moved I didn’t have a rice cooker, so I was very excited to have a new appliance that could function as one in my tiny apartment! Growing up in an Asian household, though, the secret to rice not sticking is a…nonstick pot I looked around and they make them for the IP! I’ve since had very good results with rice in the instant pot, as long as you don’t let the grains dry out (aka, keep the rice covered) it should clean up pretty well.
