Polenta with Sausage, Mushrooms & Spinach

i need a cigarette.

Hey!

Remember that Breakfast Polenta I made the other morning?   Well I decided to make some for dinner a few nights ago!

I followed the basic recipe but added a GLORIOUS handful of Parmesan cheese in addition to salt & pepper to make it savory.

While making the polenta, I sauteed mushrooms and spinach in butter with garlic and roasted a few Italian Chicken Sausages in the oven.

I laid down a blanket of polenta on my plate. Topped it with the mushrooms & spinach and then added the sausage!

I finished it off with a dash of red pepper flakes and of course, more Parmesan cheese!

Then I sat on the couch, full as a mofo in my elastic-y sweatpants, watching Six Feet Under (we are re-watching the entire series again).

  • Oh my goodness this looks so yummy! I just love polenta (or grits as we call it down south)

  • try the store bought polenta! it is really good too ! I cut it in slices,
    dab olive on it and parmesan cheese and put it in the oven.

    I serve it with sausage spaghetti sauce (just sausage, no ground beef).
    It is DELICIOUS !
