Pumpkin Bourbon Milkshakes

  • 2 cartons (14 oz. each) vanilla ice cream, softened
  • 1 cup canned pumpkin
  • 1/2 cup milk
  • 1/4 cup bourbon
  • 1/4 cup packed light brown sugar
  • 1/4 tsp. freshly ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • sweetened whipped cream (optional)
  • gingersnaps for garnish

Whirl ice cream, pumpkin, milk, bourbon, sugar and spices in a blender until smooth. Pour milkshake into 4 tall glasses and top each with a dollop of whipped cream, a pinch of nutmeg and a gingersnap cookie. Serve with straws.
