Prickly Pear Cocktail
makes 2 drinks
recipe adapted slightly from Rachael Ray Magazine
- 1 pear, peeled & chopped, plus slices for garnish
- 1 tablespoon honey
- 1/2 lime, juiced
- 3 oz. bourbon
- ice cubes
- 6 oz. ginger ale, chilled
In a cocktail shaker, muddle the pear, honey and lime juice. Add the bourbon, fill with ice and shake. Strain into 2 glasses. Top with ginger ale and garnish with pear slice.
