Autumn Reset Button Salad

makes 4 servings

  • 7 cups arugula
  • 2 cups cooked wild rice
  • 3 cups roasted delicata squash
  • 2 apples, thinly sliced
  • 1/3 cup dried cranberries
  • 1/3 cup pepitas
  • 3/4 cup toasted walnuts
  • 2/3 crumbled feta cheese
  • honey mustard vinaigrette (see below)
  • salt & black pepper

In a large bowl, combine arugula, wild rice, delicata squash, apples, dried cranberries, pepitas, walnuts and feta. Toss salad with honey mustard vinaigrette to coat. Season to taste with salt and black pepper. 

for the dressing:

  • 1/4 cup apple cider vinegar
  • 2 tablespoons dijon mustard
  • 2 tablespoons honey
  • 1/4 cup extra virgin olive oil

In a small bowl whisk together vinegar, mustard, and honey. Slowly add olive oil, whisking constantly until emulsified. Season to tast with salt and black pepper.
