Lime Sorbet

 makes 1 1/2 pints

recipe slightly adapted from Cooks Illustrated 

  • 1 1/4 cup sugar
  • 1 1/2 cup boiling water
  • 1/2 cup fresh lime juice (from about 4-5 limes)
  • 2 teaspoons lime zest
  • 1 tablespoon vodka (optional)

Dissolve sugar in boiling water and let cool to room temperature. Stir in fresh lime juice, lime zest and vodka (if using). Give mixture a little blend with an immersion blender and transfer to your ice cream maker. Follow instructions and chill sorbet in the freezer for at least 2 hours before serving.
