So I had a little request from lovely Alex of Strawberry Lemonade to do a little roundup of my Thanksgiving pasts/ideas. My mom always hosts Thanksgiving, so most of the weight of the day is on her. She rocks. She's traditional. She makes a wonderful spread!
For our Thanksgiving, I bring a sweet potato dish topped with pecans & a HUGE batch creamed spinach to the party. I've never blogged the recipes to either one (which kinda shocks me!) Maybe I should....
The past few years I've made a fluffy pumpkin tiramisu for dessert, but it usually never gets finished cuz everyone in my family stuffs themselves all day long and never saves room for dessert! I hate that! It tastes good, but it has a shelf life!
If you are looking for some Thanksgiving ideas, I've compiled a few!
If you are on appetizer duty,

Make a Sundried Tomato Goat Cheese Log!
If you are in charge of stuffing,

Make an Italian Sausage & Chard Stuffing!
If you want to make a veggie dish that will create no leftovers,

Make some Brown Sugar Glazed Brussels Sprouts!
or

Make a tasty side of Baked Artichokes!
If you want to mix up your yearly pumpkin pie...

Make Pumpkin Parfaits!
If you have a Trader Joe's near by, pick up some gingerbread cake mix and

Make some Gingerbread Cupcakes with a Pumpkin Cream Cheese Frosting!
Also at Trader Joe's, get their Pumpkin Bread Mix and

Make a loaf of Chewy Oatmeal Pumpkin Bread!
And if you have leftover Pumpkin Puree the next day...

Make Pumpkin Waffles!

I'm in charge of a side dish, a spinach/artichoke/cream cheese casserole thing (step-grandma's recipe). I'm trying to think of ways to jazz it up a little bit though...maybe adding some parmesan cheese to the cream cheese mixture (though there's already some parmesan on top of the dish)...or maybe adding some lemon juice & lemon zest to the cream cheese. Or maybe I'll just leave it alone, because everyone seems to like it just the way it is!

I'm not sure yet what I'll be doing. I usually end doing at least 2 veggie side dishes & 1-2 desserts. My traditional dish is roasted green beans with garlic cloves & red onions, topped with balsamic vinegar & pinenuts after roasting. The last couple of years I've also done a butternut squash/apple/cranberry/maple syrup dish, but I might try something different.
My sister & her family mostly are gluten-free eaters, so I am excited to try a new twist on pumpkin pie this year. I found a recipe to make a pie crust using crushed gluten-free ginger snaps - doesn't that sound delicious with pumpkin pie? And so easy - you basically mix crushed ginger snaps with butter, press in a pan & bake. I'm also tempted to make a flourless chocolate cake, as I love those & recently got a great deal on Scharffen Berger baking chocolate.
