It recently dawned on me that don’t have enough grapefruit in my life. It’s probably because I spent so many years with a grapefruit aversion. I blame that one time my dad was on a diet and I tried eating a grapefruit for breakfast with him. I didn’t understand why anyone would want to have something so bitter…..and then I grew up.
I suppose I’ve turned into one of those adults who thinks things are TOO SWEET; hence my love newfound love for grapefruit. Plus the smell is just so intoxicating.
Here we have a citrusy/herbal cocktail with the combination of thyme simple syrup, fresh grapefruit juice and a spritz of sparking water. I added a grapefruit sugar rim for those moments when you’re not so sure about the bitterness of grapefruit. Not only will it make your kitchen smell great, it will give you a nice refreshing buzz. Enjoy!

First we need to make simple syrup and steep the thyme in it.
Take out a few sprigs so you can have something to garnish your drink with.
Push it down. We want it to sit for an hour.
We can also get started on our grapefruit sugared rim.
Grated grapefruit zest. Use a Microplane!
Thyme syrup. You’ll have leftovers. You’ll love it.
The juice is loose.
Let’s make some drinks.
Rim the glasses. Dip them in a little water. I used a measuring cup!
Like jewelry for your glass!
For each drink we take two shots of grapefruit juice. One shot of thyme syrup and one shot of gin.
Top the rest with sparkling water!
Enough for 6…. so 2 of you can be REAALLLLL happy or three of you can be COOL.
It works great without alcohol too!
- 1 1/2 cups water
- 1 1/2 cups sugar, divided
- 1 bunch fresh thyme, plus a few for garnish
- 2 tablespoons grated grapefruit zest
- juice of 4 grapefruits
- 1 1/2 cups gin
Combine 1 cup sugar and water in a small saucepan and bring to a boil, stirring to dissolve sugar. Remove from the heat and add the thyme. Let steep for 1 hour. Strain the time and chill the syrup.
Combine 1/2 cup sugar and grapefruit zest in a small bowl. Transfer sugar to a shallow plate and set aside.
To serve, dip the rim of each 12 oz. high-ball glass into a shallow cup of water; let excess water drip off. Dip each rim into the grapefruit sugar. Set each glass aside and fill each halfway with ice.
Add 3/4 cup of grapefruit juice to each glass followed by a 1/4 cup gin, a 1/4 cup of thyme syrup. Give the drink a gentle stir and then top each glass with sparkling water and garnish with a twig of thyme.
