Last Minute Thanksgiving

Here we are, two days away from Thanksgiving. TWO DAYS. Truth be told, I haven’t given much thought to what I’m making this year because I’m living in a place called DENIAL right now.

What I do know is that I’ll be making a scrumptious sweet potato puree with pecans that I’ve never posted before cuz I always make it last minute and never have enough time to photograph it. Maybe one year I’ll get around to it. This year I’ve been given the responsibility of making a fancy dessert and I’m thinking this Pear Cranberry Crumble might fit the bill! My mom always makes a traditional pumpkin pie but we always like something new and different to serve with it.

If you’re waiting til the last minute like me, let me throw you a life raft. I’ve got a few ideas for you!


Let’s discuss appetizers!

Butternut Squash Ricotta & Sage Crostini (doesn’t this just SCREAM Thanksgiving?)


Herbed Ricotta Bruschetta (impress your guests with your own ricotta!)

Caramelized Mushroom & Shallot Bruschetta (mushroom lovers unite)

Herbed Cheese Straws (Puff pastry. Nuff said)

And now we have our salad course….

Addictive Brussels Sprouts Salad (turn a new generation onto B-sprouts!)

Arugula Fennel & Orange Salad (bright orange, crunchy fennel & peppery arugula. Yumtown.)

Tuscan Kale Salad with Pecorino (it’s like a Caesar but with kale!)

And then we have some side dishes:

Roasted Brussels Sprouts, Butternut Squash & Cranberries (vegetarian, vegan, GF you name it!)

Delicata Squash with Kale & Cannellini Beans (heartiest salad to satisfy a vegan or vegetarian!)

Nut Stuffed Delicata Squash (nuts, sage & cheese stuffed inside a delicata squash!)

Baked Apples with Savory Stuffing (a fun way to shake up stuffing!)

Let’s talk about desserts! If you wanna do something different this year, try some of these:

Fluffy Pumpkin Parfaits (like pumpkin pie in a cup!)

Pumpkin Gingersnap Ice Cream (remember freezing time!)

    i’ll have a plate of everything please and thank you – especially those crostini and cheese straws! i think this pregnancy is making me crave carbs (although let’s be honest, i craved them anyway. being preggo is just an excuse for that…)
