I made this Melon & Mint Salad many years ago and I’ve been thinking about it lately. There’s something so nice about cold melon. It’s super refreshing on a hot day. Pair it with some crunchy cucumbers, a squeeze of lime juice, a dash of sea salt and some fresh mint and you have yourself an amazing snack. Or if you’re feeling up to it….just make some Cucumber Watermelon Popsicles.

I am still riding a high from Memorial Day Weekend. Can we prolong the weekend? Please? Can I just sit here with this Shortbread Strawberry Crumble??!
Casey and I went to one of our favorite places for the weekend and we ate like it was our last weekend on Earth. One of the highlights was the special dessert we ordered from Glen Ellen Star. And to think Casey wasn’t sure if he wanted dessert! I knew it would be the first recipe I’d recreate when I got home and here it is!
For this recipe, we take juicy strawberries and roast them. If you’ve never roasted strawberries, you should definitely DO IT NOW. Then we top them with crumbled shortbread cookies when they’re hot from the oven. It’s the simplest/most rewarding dessert. It takes no effort at all! When it comes to Summertime eats, simple is always best. Let the strawberries SHINE.
I almost always make rice for my weekly meal prep because both Casey and Cooper can never get enough rice. When we have leftovers, it’s easier to make great dishes Bacon Fried Rice and these Cheesy Mushroom and Spinach Baked Rice Bowls. Potato leftovers make, great breakfast hash. Remember? Leftovers breed creativity! Think: Mushroom & Spinach Baked Rice Bowls
Crispy baked rice with parmesan, mushrooms and spinach. IN RAMEKINS!!!
Serve with a squeeze of lemon and all is right in the world. Look at you, rocking dinner.
Proud of you!
Here’s what this past week looked like:
I was in New York & Connecticut this week. Visiting my grandma & family.
I traveled with my dad. It was just us. It was so much fun road tripping and flying with him.
We listened to oldies music and routinely smiled at each other.
My cousins house is one of my favorite places on Earth.
Good morning.
Watching the shadows dance on my arm.
Coffee and this. I can’t wait to bring Casey & Cooper here.
Dock cat. Yappy little thing.
This is Brody. He’s a Leo.
This is Gypsy. She’s afraid of gates. I got to take her on several walks.
Lush.
I want one of these trees.
Make a wish.
