Avocado Sushi Bites

Avocado Sushi Bites // shutterbean

Alright. I've done plenty of sweet snacks, let's do something savory! Cooper and I really love the roasted seaweed sheets from Trader Joe's.  I can eat two whole packages in less than 2 minutes.  It's messy and they're fine on their own, but why don't we do something else with them instead of jam them into our faces? I sliced avocado and put them on two doubled up sheets of nori, topped each sushi bite with a little bit of sriracha, a few carrot shreds (for color and crunch!) and finished with a sprinkle of toasted sesame seeds. It's makeshift sushi without the rice!  It's my new favorite way of eating avocados. Enjoy this healthy snack!

    Shut the front door!
I'll eat these by the truckload!

  • I knew there was a purpose out there somewhere for the huge package of seaweed sheets I got from Costco yesterday!

  • Looks delish! I love seaweed sheets, but I'd definitely make the effort to get them more often if I was making cute little bites like these! :)

  • I so wanted to like those seaweed sheets. But no. I just can't. I'd so eat the avo off the top of these snackies, though!

  • Holy yum!

A lot of regular stores carry it now. Hopefully you can find it at a non-Trader Joe's store :)

Whoa! I am starving and waiting for the red quinoa to boil for my reset button salads and realized I had everything I needed for this, so I ran to the kitchen and stuffed it all in my mouth. It really does taste like sushi!
