I was doing a deep dive on Shutterbean last week, and one of the things that brought a lot of traffic to my website when I first started was sharing all of my favorite things from Trader Joe’s for the whole month of November 2007. There are a lot of things that were on that list that don’t exist there anymore. Cinnamon Sugar Roasted Almonds used to be a staple. They brought it back for a bit, and they’re gone now. If you miss them as I do, here’s your chance to make your own. It’s probably cheaper to as well!
Ingredients involved:

Stir the cinnamon, sugar, and salt together. Set aside.

Whip your egg white with a little water. You want it frothy like so.

Toss the cinnamon sugar in and stir well!

Spread out on a prepared baking sheet.

Stir a bunch of times while baking. TADA.

Let cool and wrap them up!

Roasted Rosemary Almonds
recipe adapted from All Recipes
makes about 5 cups1 large egg white
1 teaspoon cold water
4 cups whole almonds
½ cup white sugar
2 teaspoons ground cinnamon
¼ teaspoon saltPreheat the oven to 250F.
Lightly grease a baking sheet. Lightly beat egg white in a large bowl. Add water and beat until frothy but not stiff. Stir in nuts until well coated. Mix sugar, cinnamon, and salt in a small bowl. Sprinkle sugar mixture over nuts and toss to coat. Spread evenly onto the prepared pan. Bake, stirring occasionally, until golden, about 1 hour. Allow to cool. Store nuts in an airtight container.
