Spicy Coconut Noodles

Just when I thought I tackled all my stacks of rogue recipes ripped out from magazines, I went through one of my old purses and found a treasure trove. For the record, this is how I organize some of my recipes to make. So, this recipe is something I’ve had in my possession for almost 9 years. You should have seen how discolored it was! And as I was meal planning for last week, I thought these Spicy Coconut Noodles would go really well with the Sambal Chicken Skewers I grilled. I love when things magically work out like that.

I took a big risk with those two recipes in the fact that my husband isn’t into chicken as much as I am and I wasn’t really sure how he feels about coconut in noodles. I don’t really have a history of making us dishes with rice noodles, so  I was pleasantly surprised that my risk paid off because he told me the combination was “REALLY GOOD.”  Then he proceeded to get a second helping and then told me I should make it again. Hallelujah!

I suspect he loved the creamy sauce on the noodles…the spice…the basil (although I should have used Thai Basil!) and the fish sauce. He’s a sucker for fish sauce. It’s like a creamy Thai alfredo. Winner winner chicken dinner. Literally.

Someone asked me if I’ve made plans for the Summer and all I could say was that I’m gonna do a lot of grilling. I definitely have my priorities straight.

In a quest for a simple grilled recipe, I found this winner in my stack of ripped out pages from magazines. This will definitely be a staple in our Summer 2015 Rotation. I imagine we’ll do a version with pork tenderloin or steak. Nothing like sweet/spicy/crispy chicken pulled right off a skewer. I made these beauties with a spicy coconut noodle dish that I’ll be sharing on Wednesday.  Stay tuned!

Fruit with Honey Lime Yogurt Dip

Sometimes you need to employ a few tricks as a mom. And by sometimes…I mean ALL.THE.TIME.  Here’s the thing–I can’t get Cooper to put fruit IN his yogurt, but I CAN get him to DIP fruit in yogurt. But I don’t call it yogurt…I call it Honey Lime Dip. I take about a cup of plain Greek Yogurt and mix it with a tablespoon of honey, the zest from one lime and a quick squeeze of lime juice. I put some fruit on a skewer and watch him go to town. It’s also a great way to prolong the act of eating if you’re a grown adult. I don’t know about you but I always wish my bowls of yogurt were bottomless. Especially when granola’s involved… Sigh…

Gluten Free Fudgy Brownies

There was a bake sale at school last week. We got a notice that there would be gluten free/nut free options for those with dietary restrictions and it got me to thinking that I don’t really have a gluten free baking prowess to flex. I’m not seasoned veteran with gluten free baking because I don’t have the arsenal of flours in my pantry. I do have quite an assortment of hot sauces though…which only helps a select few. Gluten-Free Fudgy Brownies to the rescue!

I saw this recipe on Martha Stewart website the other day and was intrigued. No flour. Just cornstarch. I also saw that I had every ingredient in the ingredient list so OF COURSE I had to make them.

Annnnnd YES. They’re totally fudgey. Perfectly intense with good hit of chocolate. They’re both chewy and crisp on the edges. You wouldn’t really know they were gluten free. They definitely passed the taste taste in our house! I’m glad I have something good to offer future bake sales…of course I’ll make them without walnuts but in my house, a brownie isn’t a brownie if there’s no nuts in them 🙂
