If you’ve had a crazy EAT WEEK and you’re looking for a good reset button, try this salad.
It’s my RESET BUTTON.
Crispy apples are mixed with creamy avocado, the crunch of sunflower seeds and peppery arugula in a tangy honey mustard dressing.
Your taste buds are back on track…craving good things…until you make Breakfast Cookies…
Now you need a new RESET button…
And we’re off!
Ingredient gathering!
Chop up stuff!
Make the dressing.
Cut up the avocado.
Throw everything into a bowl. Pour your dressing on top! My hand is doing weird things here.
Toss the salad!
Put the salad in a bowl.
EAT IT UP!
Avocado Apple & Arugula Salad
makes 2 generous servings
- 1 apple, chopped (I used a Cameo apple)
- 1 avocado, chopped
- 6 cups arugula
- 3 tablespoons sunflower seeds
- 1/4 red onion, minced
- 1 tablespoon honey mustard
- juice of 1 lemon
- 2 tablespoons olive oil
- 1 teaspoon honey (more or less depending on your taste)
- salt & pepper
In a small bowl, whisk together honey mustard, lemon juice, olive oil. Chop apples and squeeze a small amount of lemon juice on top and toss to prevent discoloration. In a large bowl, add the arugula, avocado, apples, sunflower seeds, red onions and pour dressing on top. Season with salt & pepper and serve with a side of crusty bread.

Oh! So you cut avocado’s like you’d cut a mango! Interesting!
Also it just came to me… It must be frustrating to be a dinner guest of a food blogger! Imagine the extra time it takes for the food to get ready with all the photograph interruptions!
Yeah. I scoop it out with a spoon too. It’s super easy.
Oh and if I have company over, I don’t usually make recipes while they are here. I can’t concentrate on it all! I will make something in advance and shoot it before they arrive, or make something tried & true so I don’t have to worry about anything!
But…being MARRIED to a food photographer is where it gets difficult. Just ask my patient husband who waits ALL THE TIME.

Use vinegar! I bet a champagne or white wine vinegar would be just fine!

This post popped in my head while I was staring down the wall of salad greens at Trader Joe’s and I’m so glad it did– we made it last night for a light dinner, but it was fantastic and filling. It was the best kind of filling, where you get to feel a little smug about how healthy your dinner was

I made this with what was on hand for 2 side salads, which was 3 handfuls of arugula,1/2 avocado and 1/2 pear. For the dressing I used juice from 1/2 a lemon, 1 Tbl. EVOO, 1 Tbl. balsamic vinegar, 1 tsp. sugar and black pepper to taste which made enough for 2 nights. Thank you for the delicious combination for an arugula lover like me!
