A few weeks ago I went out to eat at restaurant near work and had the most AH-mazing kale slaw. It was a special and will probably not to be on the menu again (at least that’s what the waiter said). How am I to resist a special kale slaw? It’s my kryptonite! My coworker and I ordered the slaw and on the first bite she realized it had garlic in it (she’s allergic to garlic!).
When the waiter came back, she asked for a different salad and just when he tried to take her plate away, I called dibs on her slaw. Yeah, I totally did that. The waiter gave me a weird look, but after a few bites of my own slaw I realized that there was no way in HECK I’d let any bit of that slaw go to waste.
Nope!
Not gonna happen.
My coworker got another salad while I ate my slaw and half of hers. I would have totally eaten her whole plate if the waiter didn’t give me the stink eye. Maybe he called dibs on the salad? I heard nothing. I was too busy figuring out what was in the slaw so I could recreate it at home.
My rendition here is pretty close. There’s a little less oil and I didn’t put the grated Pecorino cheese (weird, right?) in the slaw because I wanted to keep it vegan. What I came up with is an Asian inspired slaw that will have you eating off other people’s plates. There’s just something about that mint with the crunchy cabbage & kale in that tangy sweet sesame dressing. Straight up addictive, I say!

Cashews chopped. The salad at the restaurant had peanuts in it. I didn’t realize I didn’t have peanuts until I went to pull them out for this recipe. Woops. I’ll use peanuts next time but these roasted cashews were bomb.

Kale Cashew & Mint Slaw
serves 4
(original Shutterbean recipe)
- 1 bunch lacinato kale, shredded
- 2 cups cabbage, shredded
- 2 scallions, finely chopped (both white & green parts)
- 1/2 bunch fresh mint, roughly chopped
- 1/2 cup roasted cashews, chopped (peanuts can be used)
- 2 tablespoons agave syrup
- 2 tablespoons toasted sesame oil
- 4 tablespoons rice wine vinegar
- 1 inch piece ginger, grated
- 1 clove garlic, minced
- salt & pepper
Chop the kale, cabbage, scallions & mint and set aside in a large bowl. In a small bowl add the agave syrup, sesame oil, rice wine vinegar, ginger and garlic and stir. When ready to toss, add the chopped nuts to the large bowl and pour the dressing over the kale cabbage mixture. Thoroughly coat the kale, season with salt & pepper to taste.

Hi Tracey! I have an amazing kale salad recipe that is vegan as well and it’s so good that I eat it all the time. Have you ever massaged your kale? You massage it (literally massage it) after you put the dressing on and it breaks down the kale and the kale absorbs the dressing. You then let it sit for an hour or longer and it tastes amazing. I find I can eat a whole head of kale in ones sitting when I massage it. I’m not sure that eating a whole head of kale is the best thing, but it tastes so good especially with dried cranberries and toasted almonds on top.
I am going to give this salad a try as well and massage it down. It looks great!

I LOVE kale! I made a raw kale salad once and it was amazing but I’ve been too lazy to “massage” the kale and make it again. This slaw looks amazing though, I just bought a bunch so I might have to make this very soon.

I cannot find Kale, anywhere in my neighborhood. Damn living in the half suburban/farm land, that I live in currently; I have to go outside my town boundaries to find some.
I can’t get kale in Japan, but I am going to get some seeds from America this spring, grow kale in the fall, and then eat this salad every day.

Oh dang, I’m going to have to seek out some kale. You know what’s bonkers about Sweden? (a lot, actually) You can only find kale in the grocery stores at Christmas time. It’s a cold weather crop! It’s a cold country! What’s the deal?! Sometimes you can source it out at out of the way health food stores. This looks like it would be worth the mission to try and find some. Yum!

We made this last night, and it was awesome! Topped it with some tofu skilleted up with some soy sauce and yummy red peppers + red pepper flakes. I didn’t even crave dessert after. WHAT???

I found this recipe through Jill’s link on her blog. While I was at the grocery store I pulled it up again on my phone and read the ingredient list. Bought all the ingredients, made it, served it, and was told “You can make this again anytime.” Awesome!
I used purple cabbage, because it’s pretty, and added some chopped basil and sesame seeds. Can’t wait to try out more variations. I love the dressing!

I just made this tonight and it is SO DELICIOUS. I could not get it into my mouth fast enough!!! Definitely adding this to the lunch salad rotation… maybe with some seared tofu on top.

I just made this slaw for the 3rd or 4th time, this time with cilantro in place of mint (too $ at my co-op). I’m chewing it as I type. If you wrote a cookbook filled with recipes like this, I would be on it so fast! This is the best way to eat greens!
