Congrats on your new book-  Pretty Dish . I LOVE IT!   I just wanted to let you know that you are my hero. I too waffle back and forth in my taste for oatmeal. Most of the time it’s a hard pass. But then I saw the picture of the chocolate oatmeal in your cookbook and OH, MY GOD, HOW COULD I NOT TRY CHOCOLATE IN MY OATMEAL??!  I drizzled peanut butter on top. Then I sliced bananas because FRUIT. The only thing I regret was not using chunky peanut butter. Next time!

Chocolate Peanut Butter Oatmeal

serves 2

recipe slightly adapted from Pretty Dish

  • 1 cup old fashioned oats
  • 2 cups milk (of your choice!), divided
  • 1/2 teaspoons salt
  • pinch ground cinnamon
  • 3 tablespoons unsweetened cocoa powder
  • 2 tablespoons maple syrup
  • 2 oz. bittersweet chocolate, chopped plus extra for garnish
  • 1 teaspoon vanilla extract
  • 1 banana, for serving
  • 2 tablespoons peanut butter for serving

 

In a saucepan, combine the oats and 1  ½ cups of the milk and place over medium-low heat. Add the salt and cinnamon and stir to combine. Cook, stirring often, for 15 minutes, or until the oats are super creamy. Remove from the heat. Stir in the cocoa, maple syrup, chocolate and remaining ½ cup milk. Stir in the vanilla.

Serve with extra chopped chocolate on top with bananas and peanut butter.

    Yummy! I’ve never thought of adding milk to my oatmeal but I love this idea. Sometimes my oatmeal turns out too gloopy and I think milk would be the perfect solution. PB + chocolate is the all time best breakfast combo!!

    I don’t add milk to my oatmeal, but I do add a little pour of hot coffee….which might be quite delicious with chocolate oatmeal!
