
If you have to bring a salad to a BBQ, picnic, or party this Summer, might I suggest this simple Pineapple Apple Fruit Salad? I stumbled upon this combo a few years ago, and there’s no looking back!

What makes it delicious other than the fact that it doesn’t get mushy in the fridge after a few days?

The flavor enhancers of lemon verbena, lime, and mint make it a showstopper fruit salad. It’s tropical, it’s citrusy, it’s crispy, crunchy, and JUICY. You’ll see why it’s one of my meal prep staples.

Chop the pineapple + apple.

Toss with a juice of one lime.

Stir in your lemon verbena and mint.

I like it when it’s super cold!

It lasts in the fridge for a few days. The only thing you’ll notice is that the mint will kinda brown.
The lime keeps the apples fresh! After a day or two in the fridge, the juice you’ll find at the bottom is incredible. It’s like a pineapple limeade.

I would be so grateful if I found this on the table at a picnic. I’m packing it on my next picnic!
serves 6-8
- 1 pineapple, peeled, cored, and cut into bite-sized cubes
- 2 apples, cut into chunks, the same size as the pineapple
- juice of 1 lime
- 1 heaping tablespoon lemon verbena
- 2 tablespoons chopped fresh mint
Place the pineapple and apples in a large bowl. Add the lime juice, lemon verbena, and mint. Toss gently until everything is evenly coated. Serve immediately or chill until ready to serve.
