Baked Kale Chips

I am totally jumping on the band wagon here and I really think you should too! Have you been seeing baked kale chips all over the internet like I have? There's definitely a good reason for the buzz.  I finally made some today and I have to say that kale chips are exceptional!  They are healthy AND crunchy, which equates to a guiltless snack.

Ever had broccoli rabe? Do you like the taste of dried toasted seaweed?  You are in luck!

Totally disgusted? Don't make them! Go away!

Intrigued? DO IT. Come on!

The olive oil and the salt bring the kale to a new level of divinity. I imagine it would be a great topper for a soup or pasta.  Apparently it goes really well with popcorn!  Check out Stephanie's trick!

I have to buy more kale now, because I ate this entire plate.  I did save some for Cooper to try at dinner tonight.  Cross your fingers.

It would be very convenient if he loved them!  I am pretty sure lots of kids do.

Start by washing a bunch of kale.

Tear the leaves off the stems and put them in a bowl.

Toss the kale with a few glugs of olive oil and sprinkle the kale with salt!

Spread the kale out on a cookie sheet. I put parchment on the bottom of mine for easy cleanup.

350 degrees in the oven...12 minutes later....you have crispy crunchy baked kale!

Baked Kale Chips

  • 1 bunch of Kale
  • a few glugs of olive oil
  • salt

Preheat oven to 350. Tear kale into bite-sized pieces, avoiding the tough inner stalk. Rinse well in water and dry as best you can either in a spinner or on a tea towel. Pour a few glugs of olive oil on a baking sheet and add the kale. Sprinkle with salt and toss gently to evenly distribute the oil and salt, being careful not to toss the kale out of the tray. Place in oven and bake about 10-15 minutes, or until the kale is crisp. Best if eaten warm but not necessary.

  • My hubby and I adore kale chips, but my kids are kinda iffy about them. Great idea - no - brilliant idea to crush them up and sprinkle them on popcorn. That smokey, nuttiness would be perfect on top of popcorn. :)

  • I'm munching on a seaweed covered rice cake as I read this so I have no doubt that I will love that kale!

  • They're delicious! Trying drizzle a bit of apple cider vinegar and sprinkles of garlic powder and cayenne on top. It pops in your mouth. Great idea to mix with popcorn!

  • ok, i am now officially hooked! i put a bit too much salt on them, but i secretly loved the saltiness. next time, i'll try some spices (maybe even spike! who knows?) to appease my husband. thank you for sharing this! yum, yum, YUM!

    A good friend told us about Kale chips last fall & how absolutely tasty they are
    Always in need of yummy healthy snacks for our 18 month old, we gave them
    a try & not only does he love them, we find them pretty darn delicious too!

    I'm always amazed at how something like Kale, with a few easy steps, can be
    turned into something so scrumptious!

    Btw: a great addition to this "recipe" is grated parmesan! Just toss in the bowl
    with the other ingredients & it's soooooo good.

  • Well,I also tried the "kale chips'and to say the least,they are fantastic.I bought a bunch of organic kale,tried one batch,then the rest.I ate thole whole thing.I used balsamic vinegar and spike to put a little touch of saltiness on..what a wow snack,nutritious and gulit free.Go ahead and try this.You won't be disappointed.

  • You should try it with Lacinato Kale, also known as Tuscan or Dinosaur Kale. Much more wonderful flavor.

  • I used kale, mustard greens and collards and tossed in some sesame seeds as well. DELISH!!!

    Thanks for the basic recipe, I will be improvising seasonings like garlic, onion, pepper flakes and even some smoke flavoring.

    Also, I am going to try different dipping sauces.

  • I thought these "chips" looked like a great snack idea. But when I tried this recipie the kale just wilted and went flat and not very crispy even after 15 minutes. Any suggestions? thanks

    • Did you dry them off thoroughly before you put them in the pan? Were they wilty? If you don't dry them off they don't crisp as well!

        Yes, I thought that I had dried them well, but I think that I added too much salt also. They were way too salty tasting for my taste. I also used the kale about 3 days after I had bought it. Maybe it was not as fresh as it should have been. They finally did get more crispy with more time in the oven but I could barely eat them.....I kept getting a bitter, salty taste. Not pleasant at all!
        Not sure I want to try these again. Thanks for your feedback!

      • Oh no!!! Too much salt can ruin the taste for sure! Kale is a little on the bitter side- the result is like seaweed & broccoli (which I like). Sorry it didn't work out for you :( But thanks for trying!

  • I finally bought a bag of kale and am going to make these tonight. My stomach I'd rumbling just thinking about them!

  • I made these and they were delicious but how do you store them if you don't eat them all in 1 sitting? i put mine in a bowl with a paper towel over it and it was soggy when i got home. any suggestions? or perhaps the problem was that i used too much oil and salt?

    • I think the paper towel might have helped keep them moist! Make sure they are super dry and out them in tupperware!

  • These are great, especially warm. I love adding a little garlic, and a sprinkle of parmesan cheese prior to baking! Yummmmmmm.

  • I have made these before - to die for. I have been known to eat almost 2#s of kale in on sitting cause of this!
    try this: add apple cider vinegar to your oil. Delish!
    I also add herbs sometimes too!
    Someone gave me a "pizza spice" grinder for Xmas once. It was loaded with italian seasoning & sea salt. I put that on top instead of plain salt and the chips didn't last a day!

    Also, using canola instead of olive oil will let you cook them longer. This helps when the kale is extra thick & tough!
