1000 Seed Banana Date Muffins
Random thoughts going through my head:
Do you think that someone actually counted out a thousand seeds in this recipe? At what point did they get interrupted by a 3 year old and lose count? My guess is 33. Do you think it's a thousand seeds per muffin or per batch? If I walked over to the mirror right now, how many seeds would be stuck in my front teeth? Who would be the first person to tell me about that poppy seed stuck near my canine? Why is the term muffin top so good yet so frightening? Why can I not resist a bread product covered in seeds?
Do you think there's a thousand specks of glitter in my nail polish? I put on three coats...
Pumpkin seeds, sunflower seeds, poppy seeds and sesame seeds make up that seeded muffin top. I told you they were seedy! They're super healthy (almost NO oil!) and packed with a fun ingredients including yogurt, bananas, whole wheat flour, ground flaxseed, whipped eggs whites and pureed dates! If you're planning on eating one before you leave the house, check your grill in the mirror! It's totally seed central.
White Chocolate Peppermint Pretzels
I dropped Cooper off at preschool yesterday and immediately headed to the post office to mail packages & pick up stamps for the holiday cards I have yet to send out. The line at the post office went smoothly and the lady who helped me was an absolute dream. Hooray for excellent customer service! Then I went to pick up a few groceries and just when I was ready to tackle another item on my TO-DO list, my car wouldn't start! For the first time in my life, I ran out of gas. I KNEW I should have stopped at the gas station before I got groceries but I felt like I've been pushing EVERYTHING in my life to the limit lately, I assumed my car would push too. Thank God for husbands who come to the rescue!
Emails piled up in my inbox, clean laundry overflowed in baskets on my living room floor and then one of my cats puked on my stairs (which I stepped in!). To combat the stress, I took a break and went out to lunch with Casey. We went to get fancy sandwiches and fresh air but after THREE attempts at making my sandwich without mayo and over an hour of my limited time wasted, I felt like throwing in the towel. It just wasn't my day!
Instead of tackling my TO-DO lists when I got back from the sandwich fail, I made these white chocolate peppermint pretzels instead. Getting lost in dipping pretzels into creamy melted white chocolate, studding them with cracked candy canes and lining the rods (haha, rods!) up into organized rows, made me happy. And then... I got a call from preschool telling me that Cooper needed to be picked up ASAP because he contracted pinkeye. It's a good thing I got at least one solid thing done that day...
What's my point? There's no doubt that the holidays can be stressful. These little obstacles in life are only as big as we make them.The pressure we put on ourselves this time of year has the power to erase the holiday spirit we're supposed to give & receive. Relax!
If you're stressing out because the clock is ticking and you haven't figured out what to make for the holidays, just make these easy white chocolate peppermint dipped pretzels. They're therapeutic and they pose as little reminders of how sweet, savory & crunchy life can be.
Remember: Make things simple and give yourself permission to slow down!

Now that that's out of the way, let's talk about this favorite snack of mine. It's really simple, absolutely tasty and worth it when you find an awesome avocado. I think I've only had two really good avocados this year. What gives? Sometimes I eat this tortilla & avocado number with an egg in the morning. Sometimes it's a full blown lunch or maybe it plays the role of an afternoon snack. The protein of the avocado works wonders!

Coconut Maple Granola
If you've been listening to me on the Joy the Baker Podcast, you already know that I have an inner hippy and I like to make my own granola. You also know that I'm absolutely smitten with coconut oil and find any excuse to use it. What you may not know is that this granola is the first time I've used coconut oil as a replacement for my favorite granola lubricant, olive oil.
This Coconut Maple Granola is the perfect snacking granola. Sure you could add some to a bowl of Greek yogurt or replace your regular breakfast cereal with it, but when you pour a little in your hand and take your first bite, you might bypass a bowl completely. This is the kind of granola that begs to be eaten directly out of the jar. Perhaps it's the crunchy roasted almonds mixed with golden oats and coconut or maybe it's the salty/savory vibe that fuels the addiction. All I know is that this granola is dangerous and I think it's the coconut oil's fault! Go ahead, embrace your inner hippy and make some.

Maple Cashew Oatmeal Squares
I absolutely LOVE oatmeal raisin cookie dough. It's the only cookie dough that I'll actually eat. Other doughs just don't compare. There's something about the texture of the oats mixed with brown sugar and a hint of salt that makes me swoon. Yesterday I was sitting on my couch flipping through this Raw Energy Cookbook I picked up at the library and the teaser on this recipe said that it tastes just like chilled oatmeal raisin cookie dough. SOLD! I immediately sprung into the kitchen to test it out.
After quickly blending a few ingredients in the food processor I was blown away; it totally DOES taste like oatmeal raisin cookie dough! You won't find eggs, butter, flour or refined sugar in this mixture YET it totally tastes like dough. Weird. Crazy. Amazing! One of these Maple Cashew Oatmeal Squares pairs perfectly with a glass of milk/soymilk. I bet they'd also be great with a scoop of ice cream on top. The trick is to keep the squares in the freezer so they remain chewy. At room temperature they tend to be super gooey; they're raw! With that said, I have a strong feeling these might not last very long in my freezer this week.

Guacamole Hummus
If guacamole and hummus had a baby, they would name it Guacamole Hummus. It would be thick, rich and creamy. It would taste and look just like guacamole but have the density of hummus. Guacamole hummus would eventually settle down with a bowl of chips and make a nice home in your stomach. Don't you just love a happy ending? I do. Especially when there's an avocado involved.
Make this. Inhale it. Smother it all over your body. It's seriously good. Guacamole hummus is my new best friend.

Artichoke & Basil Bruschetta
Friends! I'm teaching a cooking class with Digital Media Playground at Macy's (in Union Square) this Saturday. You should totally come! I'll be doing a little demo on one of my favorite summer foods, bruschetta! My friend Denise will also be teaching a lesson on food photography & how to take awesome shots indoors with tricky lighting. It's gonna be fun!
I've been testing bruschetta recipes this week and yesterday I came up with this scrumptious Artichoke & Basil Bruschetta for the class. On top of a grilled/garlic rubbed crostini you'll find creamy ricotta, basil, marinated artichoke hearts, a slice of Parmesan cheese with a squeeze of lemon. It's so good I made it for both lunch AND dinner yesterday. You are going to LOVE it! One bruschetta down, three more to go!
