I love summer produce. Even when the toddler sized zucchini in my back yard threaten to form their own army before I turn them all into muffins and cake and zucchini bread. I just made Yotam Ottolenghi’s sweet corn polenta which uses fresh corn, and it’s positively a revelation. The link to the recipe from Food52 is here: http://food52.com/blog/4111_yotam_ottolenghis_sweet_corn_polenta_with_eggplant_sauce It’s definitely a delicious and fitting use for summer corn!
