Aaaaaand the boozy popsicle journey continues with Pimm’s Cup Popsicles. If you’re a fan of the Pimm’s Cup Cocktail, you’ll love Pimm’s Cup Popsicles! They’re super refreshing and pack a ton of flavor. Cocktail on a stick!
In this recipe, I added a few slices of cucumber & strawberries to the pop. So at the very end, you get a nice little frozen treat. I also used Ginger Beer because that’s what I had in our fridge. You may use ginger ale if you please! If you’re wanting to mask some of the booze and make it sweet a simple syrup will do the trick. Maybe even a mint one…oooh!
And if you don’t have popsicle molds, make a simple granita!

When we were in Hawaii, we got into this crazy routine of going to frozen yogurt every night after dinner. We became regulars for a week and it was glorious. Casey’s favorite flavor was Taro. He got it every night without fail. Mine? Peanut butter. Unfortunately, there were only two nights out of 6 where they had peanut butter and one of them was Peanut Butter Banana. It was EPIC.
And then we came home and I have craved that fro-yo since. I’ve dreamt about it… and here it is.
One thing I added (because I can!) was a swirl of peanut butter. I added a little bit of brown sugar in the swirl to make it a little sweet and slightly crunchy. It’s sweet, slightly tangy and slightly salty. It’s divine!
Now if you’ll excuse me, I’m about to have one of those CALGON TAKE ME AWAY moments, but with fro-yo.

My husband almost always stops at Lemonade stands when we’re out driving. He will also buy magazines or chocolate from anyone who comes to our door. Although I’m kind of bah-humbug about buying stuff when I’m no in no mood to be interrupted, I find this quality in him to be so endearing.
He’s like a magnet to a kid who is eager to make a dollar. He’s been there. I’ve been there. I don’t want to talk about how I was traumatized selling frozen pizzas to the creepy neighbors on my block as a kid. I get a mild panic attack when I think about walking up to the doors of some of the houses…I should remember how it feels to be on the other end when I’m passing by a lemonade stand…Ok. I just worked out my own lesson there.
Today we have some grown-up lemonade. It’s got a kick — thanks to a few dashes of Tabasco. At first you don’t taste the spice…just sweet, refreshing lemonade and then it hits the back of your throat. Hello, spicy kick! It’s just as exhilarating as seeing a customer walk up to your lemonade stand with a $5 bill!
