I’ve never had breakfast in bed. I’ve also never had a surprise birthday party thrown for me.

Parts of me feel slighted by this….

And then I feel cool about it. Because having crumbs in my bed…and spilling coffee all over my sheets (which HELLO! that’s a given for a klutz like me) while trying to read the paper that I don’t normally read is not my idea of a good time. Also, if I’m not wearing the cutest outfit or have good makeup during this hypothetical surprise birthday party situation, you best believe my attitude is going to ruin the night. Not in a diva way, it’s just that you might not get the satisfaction you desire from throwing a surprise birthday party from me.

I made these cornmeal pancakes on Saturday for my blog and we had leftovers for Mother’s Day breakfast. No, I’m definitely not bitter that I didn’t get breakfast in bed. But maybe I am a little bitter I had to make my own coffee 😉  However, my boys did spoil me with plants + planters and that’s all this crazy plant lady needs. These savory cornmeal pancakes were one of the best things about Mother’s Day (besides spending the day with my Mama!). Waking up to cheesy, chivey, crispy and DELICIOUS cornmeal pancakes with bacon, Greek yogurt (I used full fat!) and smashed avocado & egg was sheer perfection. And! I didn’t even have to worry about getting food on/in/between my sheets.

Peanut Butter Oatmeal Balls

Raise your hands if you hand peanut butter oatmeal balls when you were growing up!  I did and so did my husband…but I can tell you this, and salt and chia seeds were NOT in the mix. I think we had a combination that included milk powder. Hmm!  These peanut butter oatmeal balls have chocolate chips in them (which is absolutely thrilling to Cooper) and are made sweet/savory with a heavy pinch of kosher salt. It’s been awhile since I’ve made them but I’m putting them back into the rotation because two of them give me a tremendous amount of energy and keep my candy bar cravings at bay. Plus it gives me a good reason to say the word balls.

Brown Sugar Meringues wth Strawberries and Cream

I saw this recipe for Brown Sugar Meringues with Strawberries and Cream in the new cookbook A Modern Way to Eat (which I looooove BTW!) and was immediately intrigued because they looked like chocolate…. but they’re made with brown sugar. Have you ever had a Violet Crumble? These kinda taste like that. They’re chewy, crispy and have a hint of burnt caramel to them. I’m obsessed.

And tossed strawberries in honey, lime zest and Pimm’s and the rest is history. I immediately ate three…and this is coming a person who isn’t really a meringue lover. THEY ARE BONKERS. Fluffy, puffy, crunchy, chewy, carmel-like meringues! Did I mention that I put Pimm’s in the strawberries?!?!

Beet Avocado Poke Bowls

The Ahi Tuna Poke Bowl recipe in Sprouted Kitchen’s new cookbook  Bowl + Spoon caught my eye recently but I didn’t have ahi tuna so I made Beet Avocado Poke Bowls instead! 

I mean…chioggia beets kinda look like fish! Right?!

I threw a regular beet in the mixture and the bright red juice beautifully colored the lighter beets.

My experiment definitely paid off! The wasabi sriracha dressing and the sweetness of the beets, the crunch of the cucumber, the creaminess of the avocado, the sesame seeds and the nori create the most amazing “sushi bowl.”  Btw- this sushi salad bowl is pretty amazing too!
