Meatless Meatloaf with Beyond Beef

My mom’s meatloaf was one of my favorite dinners in her repertoire. She served it with salad & roasted potaotes. I always fought for an end piece because that’s where the crispiest part was. I am sure if she found a good meat replacement, she would have happily made this meatless meatloaf version for my vegan brother while we were growing up.

Now I can make it for him and my niece who is vegetarian and we can all remember my Mom fondly!  I remember sitting in the kitchen watching her take off her rings and mixing the meatloaf by hand in her grandmother’s giant ceramic bowl.  She always loved the leftovers on a sandwich with a ton of mayo (ick) the next day.   I like ketchup, mustard, arugula & a bunch of chips smashed in for good measure. My Mom used Worcestershire sauce in her meatloaf. It’s got anchovies in it which doesn’t make it vegetarian or vegan friendly.  I used soy sauce in this, but if you have a vegan Worcestershire sauce, go for it!

She also used eggs as a binder. Here there are none! The ingredients do a good job sticking together on their own. 

Chop therapy! Chop the onions pretty small if you can.

Put mayo on it if that’s your thing. It’s your life. Live it. 

Meatless Meatloaf

makes 4-5 servings

  • 1 1lb. Beyond Meat- Beyond Beef
  • 1  medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon soy sauce
  • 1/4 cup ketchup, plus 3 tablespoons                           
  • 1 tablespoon yellow mustard
  • 1 tablespoon thyme, plus more for the top
  • ½ cup dried Italian breadcrumbs
  • Salt & pepper

Preheat oven to 400F 

Spray a baking sheet with baking spray and set aside. 

In a large bowl, mix meat, onion, garlic, soy sauce, ketchup, mustard, thyme, and breadcrumbs with a large wooden spoon until the mixture is well combined. Season with salt & pepper and place meat on the prepared baking sheet. Shape into a loaf. Baste the 3 tablespoons ketchup over the top of the meatloaf. Sprinkle with a few pinches of dried thyme. 

Place in the oven and bake for 35-40 minutes. Meatloaf should have a nice caramelized crust.
