Brown Butter Blueberry Muffins

Part of the fun in forming friendships is finding the similarities & differences you share with someone else. There’s nothing like an opportunity to tell your stories and parts of who you are to fresh ears. When we were about a year into our friendship and still learning about each other’s lives, I remember walking down the street with Joy, telling her about my husband and his silly antics. Casey has a love for blueberry muffins like no one else and in the late 90s he created a little website for himself where he could track the best blueberry muffins around his office in downtown San Francisco. I happened to find it utterly charming and I could see that Joy respected his dedication. During that walk, Joy shared that she was working on a recipe for blueberry muffins in her cookbook that Casey would no doubt love.

Fast forward a few years later and now said cookbook is in my hands with her personal purple sharpie notes all over it. I felt somewhat paralyzed by it all. Where do I even begin?! Her friendship is so very dear to me and her cookbook has genuinely blown me away. I’m not saying this because we’re great friends; I have honestly never had a cookbook in my possession that has made me want to rush into my kitchen and try EVERY single recipe. So when I say I was paralyzed, I honestly didn’t know where to start. Which recipe first?!

I looked at her notes in the book and then found myself staring down this brown butter blueberry muffin recipe. Of course she had me at brown butter but then the memory of our conversation popped into my head. This is the killer blueberry muffin recipe! DUDE. I saw it on her website but now it’s in print!  And it’s resting on my kitchen counter!

She wasn’t kidding; even the muffin batter was insane (it tasted like caramel!). Twelve super moist (she hates that word) muffins LOADED with blueberries and speckled with a buttery crumb topping. Tracy Shutterbean & Casey approved!

Joy! Thank you for sharing your talents with me, my family and the WORLD. You’ve challenged me to see things differently. You have opened my mind up to crazy wacky pattern combos, you’ve turned me into a girl that paints her nails every week, you’ve made a bourbon lover out of me, you’ve shown me that hard work eventually pays off and you’ve also helped me find my inner Oprah voice that shouts “YOU CAN DO ANYTHING YOU WANT TO DO!”  I’m so happy the rest of the world can see how truly talented & hard working you are. I’m so dang proud of you, friend!

1000 Seed Banana Date Muffins

Random thoughts going through my head:

Do you think that someone actually counted out a thousand seeds in this recipe? At what point did they get interrupted by a 3 year old and lose count? My guess is 33. Do you think it’s a thousand seeds per muffin or per batch? If I walked over to the mirror right now, how many seeds would be stuck in my front teeth? Who would be the first person to tell me about that poppy seed stuck near my canine? Why is the term muffin top so good yet so frightening? Why can I not resist a bread product covered in seeds?

Do you think there’s a thousand specks of glitter in my nail polish? I put on three coats…

Pumpkin seeds, sunflower seeds, poppy seeds and sesame seeds make up that seeded muffin top. I told you they were seedy! They’re super healthy (almost NO oil!) and packed with a fun ingredients including yogurt, bananas, whole wheat flour, ground flaxseed, whipped eggs whites and pureed dates! If you’re planning on eating one before you leave the house, check your grill in the mirror! It’s totally seed central.

Zucchini Banana Flaxseed Muffins

Hey! Guess what? As of last week, I have a preschooler. That’s right! A PRESCHOOLER! Dang! Where does the time go? In preparation for this monumental event, I let Cooper pick out his very own lunchbox and backpack. He went with a nice robot theme and I’m glad for that because the construction themed set was not my favorite color. I know it’s not MY lunchbox, but I’m the one who has to keep tabs on it, clean it out & fill it up every other day. I’m also left with the task of having to figure out what to put in said lunchbox and I need to get him excited about lunch time at school! It’s a tall order.

At the beginning of the week, I made these Zucchini Banana Flaxseed Muffins with the idea of putting one in his lunch box as a treat for all three days of preschool. Little did I know they would disappear in less than two days. Cooper loved them so much that I actually caught him standing on a chair at the kitchen counter reaching into the container of muffins I put aside for the week! And just when I thought my new hiding place was legit, I walked downstairs to see him eating another muffin behind the couch. SNEAKY kid! If these muffins were loaded with sugar, butter or oil, I’d be upset. But the fact that there’s both zucchini and banana mixed in with a little flaxseed makes his sneaky behavior totally OK. I can’t really blame him; they taste great! They’re moist, tender, full of flavor and the flaxseed gives the muffins a nutty flavor without nuts. You would never really know that there’s no oil in this recipe. I have now welcomed these healthy muffins into his lunchbox rotation. Victory!
