Here’s what My Everyday Life Week 37 looked like:

This flower…I’ve been waiting all summer for it to grow. I wanted to plant sunflowers in our backyard but they died and then this one sprouted up from a seed that came from our bird feeder. LOVE THAT.

Zucchini Cake with Cream Cheese Frosting
Before we said goodbye to summer break, I had a little get-together at my house with our friends who live up the street. There’s nothing like grilling outside and enjoying each other’s company before the hustle and bustle of back to school season starts.
After our dinner of grilled hot dogs, tater tots & salad, I served this Zucchini Cake with Cream Cheese Frosting for dessert. It’s packed with zucchini and none of the kids had any idea until we told them.
This is an incredibly moist cake, thanks to the combination of shredded zucchini and Olivari Olive Oil. It’s not too sweet, which meant that it was the perfect thing to have the night before school started. Also…it was the perfect cake to have for breakfast with a hot cup of coffee. I believe that cream cheese frosting makes mornings, afternoons and evenings better. Don’t you agree?
Gluten Free Greek Flatbread Pizza

Watching Mr. Mom (childhood favorite!), wishing for a haircut, drinking a bourbon cocktail, hoping the laundry will fold itself and dreaming about breakfast tomorrow morning.
I made this Gluten Free Greek Flatbread Pizza last week. I had garbanzo bean flour in our pantry that was expiring soon and so I made socca. I made socca because I saved this recipe from thekitchn a looooooooong time ago. I was so excited to try it, that I immediately went out and bought the garbanzo bean flour and here we are…with it almost expiring. Nothing like waiting til the last minute.
But I took the socca a step further and smeared it with a garlic cucumber yogurt spread and topped it with juicy tomatoes, feta, and generous amount of fresh herbs. Crispy chewy crust with what’s practically a salad on top. Carb salad! But a gluten free carb salad.

I steamed horchata this morning in our espresso machine and he felt like an adult.
Cooper and I played around with his point & shoot camera this week.
I love this setting!
The project that I’m working on for a client turned into our dinner.
Gonna have to recreate this one.
Zucchini Noodles with Sausage one night.
Got to test drive the Wusthof Legende Knife collection at Williams Sonoma this week.
They had an amazing woman there who carved into melons. Talk about knife skills!

Detour to pick some bread up for Casey.
This made me laugh.
Cooper had a make a chicken salad from these ingredients lunch this week. He ate it ALL.
I picked myself up another lunchbox container so I don’t have to bust my butt trying to wash it every night.
