I had this image of shrimp & pineapple in my brain for a few weeks now. Non-stop shrimp & pineapple images going through this mind of mine. When I took this photo you see above, I was like YAAAAAAAAS. FINALLY.  Food fantasy actualized! Hello, Grilled Shrimp & Pineapple Skewers!!!

I knew that I wanted the shrimp to be kind of spicy….with an Asian/cilantro flavor profile.

And that spicy was going to be balanced with pineapple and honey.

The pineapple would be infused in the marinade so you’d get a nice kick of the lime, jalapeño and garlic with each juicy bite.

Here we are. Grilled Shrimp & Pineapple Skewers. I told Casey that I was thinking of putting some of the leftovers in a taco for lunch and he got all sad that he’d have to share leftovers. I know how he feels, man. I get super possessive when it comes to food.

I started brewing my own kombucha a few months ago and was instantly hooked. Considering that a bottle of kombucha goes for about $4 in my hometown, I’ve saved quite a few dollars and I’ve been able to enjoy a bottle of kombucha almost every single day of the week. A lot of readers have asked how I do it, so I thought I’d show you! I’m by no means an expert, but I’d like to show you how easy it is and how you shouldn’t be intimidated by the process.

With the continual brewing cycle system, I brew my kombucha every Wednesday. Each brew yields 6-7 bottles depending how much juice I add in the batch. Pretty cool, huh?

I had a little mascarpone leftover from a recipe so I stirred a little honey up in…then I dolloped it in the center of a few fresh apricots. I finished each half with a raw almond and ate all three in record time. I would have made four but my snack instinct took control.  Likely story.  Here’s another snack that involves mascarpone. It comes in handy during blackberry season 😉

Arnold Palmer Popsicles

I’ve been on an Arnold Palmer kick the past week. I love the combination of half lemonade and half iced tea. Sometimes I throw in a little bit of bubbly water to make it spritz-y. Sometimes bourbon makes an appearance…especially after work…  I had a little bit of lemonade hanging out in my fridge and freshly clean popsicle molds on the kitchen counter and then before I knew it I was brewing tea and had  Arnold Palmer Popsicles in the freezer.

We had these Arnold Palmer Popsicles the past weekend and they were SUPER good. Casey and Cooper were playing baseball outside and it was hot and I was gardening and we all stood on the deck with the popsicles dripping down our hands enjoying every bite. It was a delicious way to cool off from the heat. You have a little bitterness from the tea but it’s balanced out by the sweet tangy lemonade. My only regret was not dunking them in a glass of vodka. Next time… oh yes. Next time. Definitely after work.
