Consider this your warning that I am on shrimp kick. We had my mom’s Spanish Garlic Shrimp recently and now Falafel Crusted Shrimp has made its way into the meal arsenal. It’s shrimp fest in the Benjamin household.
I had Falafel mix from Trader Joe’s sitting in my pantry and I saw this recipe in an old Everyday Food Magazine (my precious) and thought I’d give it a whirl.
This Falafel Crusted Shrimp can turn into a choose-your-own-adventure meal. My family would pick a pita/rice option with a cucumber salad (that I’d make them eat) and I’m in the salad camp. Maybe shrimp and yogurt dip is enough? As I said, choose your own adventure.
Hello, MONDAY!
Thanks for your well wishes last week. We survived COVID here. I’m testing negative and so are Cooper and Casey. YAY. We only made it one full week of school before this all happened. Keeping a VERY ACTIVE child at home (occupied) and distancing was especially hard. I am giving myself a gold star for that.
I did some meal prep this weekend! Here she is!

I spent a lot of time in my office this week. Both Casey and Cooper had COVID so I kept my distance so I wouldn’t get it too.
So far so good. Cooper is now testing negative. YAY.

It’s Labor Day and I’m writing this from my couch. This week is going to be a little weird around here. Cooper has COVID so we adults are keeping our distance while caring for him and trying not to get it too. He’s got cold symptoms and low energy. Wish us luck this week!
