Cinnamon French Toast Muffins

Cinnamon French Toast Muffins are a hybrid (I almost typed hybread- which would have been appropriate!) of french toast, bread puddings and muffins. They’re an alternate way to get your french toast fix. They’re great for the muffin enthusiast.

I’m in it for the tops.

That’s my muffin motto.

The edges get a little crispy because they’ve been dusted in cinnamon sugar.

The insides are moist (sorry moist haters), fluffy and eggy just like french toast.

I think I will have some leftover muffins tomorrow- toasted in oven with butter and jam because that just seems like the right thing to do.

I’ve got company coming over this weekend for Memorial Day…perhaps these will go on the breakfast menu with a side of Candied Ginger Bacon? Yes. That sounds like a solid plan. Also Bloody Marys because THREE DAY WEEKEND.

Crispy Gluten Free Chicken Nuggets

There are certain words my fingers cannot type properly. I know how to spell nuggets but my fingers for some reason type out nuggest. I just had to manually type that because my computer wanted to autocorrect. You’re right computer. It’s nuggets. I also can’t type the word pumpkin without a g at the end. Pumpking Pie is my favorite pie. See?

Mushroom Arugula Toast

Sometimes I forget about mushrooms. I forget how much I love them and always wish I had more whenever I make cook them. Poor mushrooms. I apologize for the neglect.

Over-dramatization.

Sometimes all it takes is a little reminder. A nudge, if you will. I had to buy mushrooms for a photo shoot last week and then I ended up buying them again for myself because I was dreaming about mushroom toast.

Mushrooms, garlic, with creamy goat cheese, and loads of parsley and arugula on top of grilled, olive oil drizzled toast.

Oh. And I pushed it over the edge of deliciousness with some poached eggs. #putaneggonit

This is one of those recipes that could be eaten breakfast/lunch/dinner. Add more greens and you can call it a salad. At least, I think so…

Lime Ginger Broccoli Salad

I wrote a post on Books to Inspire Healthy Eating and you know what? I’m starting to eat healthier!

I totally put starting in italics.

I typed that right after taking a sip of a turmeric carrot juice, ginger beer bourbon concoction from a flimsy paper straw that looks like graph paper. #cryforhelp #retoxdetox

Back to this health thing.

First recipe I tried from the Bondi Harvest cookbook is a success.

Did it trigger that part in my brain that likes green things? YES IT DID.

One of my favorite things about broccoli is that it does a great job of soaking up whatever sauce/dressing it’s tossed with.

I always add them into stir fry situations for that very fact. That’s also why I hog the broccoli and my family only gets the beef part when we order Broccoli Beef. Sorry family! I have a feeling they’re secretly thanking me.

This dressing is a citrus ginger explosion. There’s a little bit of heat with a jalapeño. It helps round out flavor profile. The creamy avocado and the crunch almonds give this salad some great depth. So many flavors. So many textures. Coconut oil seems like a lot, but it works! You’re suddenly in a trance and you think french fries are a bad idea. You’re all healthy in this moment. This moment of eating this big ole green salad.

It might be the Reset Button Salad of 2016 because HOLY CALIBRATION, Batman. My body is like YES because my taste buds are activated and satisfied.

That could also be the bourbon talking.
