Instant Pot Saffron Risotto

Risotto isn’t really something I make at home. I mean, I’ve made it but it’s not a regular thing. Mostly because I have no time to stand around a pot of risotto, stirring constantly for 30+ minutes.

Do you know how easily distracted I am??

I also don’t make it because Cooper has no interest, so standing over a pot for 30 minutes reaaaaaaally doesn’t seem worth it, you know? I spied this Instant Pot Saffron Risotto from Dinner in an Instant by Melissa Clark and was curious because I happened to have all of the ingredients. 

I’m trying to add some things to the mix to

THINGS

UP

in the food department.  Cooking so much for my family during quarantine has taken a toll! 

It tastes like the risotto I used to order as a kid when my Dad took us out to our local Italian restaurant.

It’s creamy. It’s light. It has so much flavor, WOW!  Casey and I enjoyed some together for lunch during the week.

If only my Italian grandma was around to see this miracle.  I’m sure she would have served it with Osso Bucco. 

I think it would be good companion to my chicken piccata, lemon garlic shrimp,   or baked chicken parmesan.

Intentions for the Week – Week 34 of 2020

Happy Monday, friends!

The weekend flew by real fast. We had time with friends, it rained, I got lost doing artwork this weekend while trying to stay cool. 

It’s hot and muggy here in the Bay Area.

There’s electricity in the air. Lightning and thunderstorms. 90F+ degrees. It’s very confusing. What is happening to California?! 

This is our last week before school starts up again. Hopefully, we can find something fun/adventurous to do as a last hoorah. We’ll see what the weather has in store for us…

This week, I am hopping back on my food journaling. It’s been a few weeks. It’s the best way I have to check in with myself. The best part is that it’s always there waiting for me when I need it.  There are more in the shop!  Get one here! 

OK. Time to write down our Intentions for the Week. Here we go!

Stayed up late to watch the meteor shower with Casey on our deck. It was fun being huddled up together on a blanket watching shooting stars. 

We counted 8 until we called it quits.

Intentions for the Week- Week 33 of 2020

Happy Monday, friends!

We are on the 33rd week of 2020. Crazy, right? This weekend went by fast. We hung at home like we’re supposed to. I took a virtual Reiki workshop and had an art date outside with my friend Neiley. It was definitely a good recharge and energy clearing weekend.  We are in the last few weeks of summer here. Cooper is still functioning without summer camp & school. Hopefully, we will have some free time to do something fun (during this pandemic) before he goes back to school. It’s Sunday night as I type this. Let’s get down our Intentions for the Week!
