Vegan Ranch Dip

It’s already been established that I do not like mayonnaise.  You too? Awesome. It also means that I don’t usually like creamy salad dressings or dips because they are usually mayo-based. But this Vegan Ranch Dip isn’t! It’s made with cashews. Cashews are super creamy if you blend them! 

It’s another thing that made its way into my #shutterbeanmealprep!

It’s creamy & tangy and a really good substitute for ranch!  I added dill because I can’t get enough of it lately.  I’d like to put some on a baked potato, dip potato chips in it, or toss it in cooked potatoes and turn it into a potato salad.  Let the fun begin! Welcome to the rotation, Vegan Ranch Dip.  You’ll fit nicely in my lineup since I’m always trying to get my family to eat as many vegetables as possible.

Week 9 of 2020- Here’s what week 9 looked like last year.

Happy Monday, friends!

This weekend we had basketball (we won!) and baseball and I was able to have a playdate with my friend Emma in the city. I sacrificed meal prep time for friend time and that’s ok! I’ll spend some time tonight cleaning out the fridge and cessing out what’s left. Time to get down my Intentions for the Week so I can enjoy what’s left of this Sunday night as I type this. Here we go!

Indian Curry Turkey Burgers

I added Indian Curry Turkey Burgers to my meal prep rotation.

They’re mostly for me cuz my husbean prefers red meat in burger form, not turkey.

Although, I did make these for lunch the other day and I didn’t hear any complaints.

Happy Monday, friends!

This weekend we were away for a baseball tournament. Championship is today. Wish us luck!  I’m taking a moment to mediate on all I have to do this week & running through what I did last week.  Let’s take a moment to spell out our Intentions for the week, shall we?!  Since Cooper has to day off of school I am doing my meal prep on a Monday instead of Sunday. 

LAST WEEK’S INTENTIONS:

  • laundry
  • therapy appointment
  • sit down with my calendar and plan
  • package/ship food journals The Handwriting Club 
  • track what I eat in my food journal this week
  • catch up on social media
  • drink enough water (this  lid for a mason jar helps!)
  • continue not eating dairy, gluten & drinking alcohol
  • pull cards and write in my sketchbook
  • track my steps with my Fitbit 
  • grocery shopping
  • celebrate Valentine’s Day
  • make Valentine’s cards with Cooper
  • paint nails
  • finish hose project
  • work in my sketchbook
  • upload stuff for client
  • clean up my bedroom closet
  • post smoothie recipe
  • work on turkey burger recipe
  • bookkeeping work/tax stuff
