A Thanksgiving Brainstorm


OK. Thanksgiving. Oof. It’s less than a week away. Are we ready?? I just wrote out my TO-DO list and thankfully it’s not as bad because I got older/wiser and decided to divvy up responsibilities. I’ve got turkey, mashed potatoes, sweet potatoes, dinner roll & gravy duty this year. Oh and I’m gonna add a few appetizers as well.  The cleaning the house part is what I’m worried about most. But that’s a whole other post all together! If you’re looking for some fail-proof/no fuss recipes, I dug into my archives for you.

Drinks to Warm the Heart

Don’t you love a warm boozy drink? Not only do you have a way to warm your hands, but you get to warm your insides too.  Today I put together a little roundup of my favorite warm/boozy drinks. Cuz it’s Halloween and you might wanna bring a nice hot drink in your travel coffee mug while you’re trick-or-treating.

When we were first dating, I made Casey a mushroom dish that gave him food poisoning. He got it, I didn’t—and we BOTH ATE IT. How does that work?  I have no idea what happened, but since then he has been very apprehensive about me making dishes that involve mushrooms. I can’t say I blame him.

I absolutely ADORE mushrooms and during colder months I can’t get enough! It’s been fourteen years (whoa!) since the mushroom incident and fortunately, Casey has learned to love mushrooms. I think white truffle oil paved the way. I can put it on anything and he will devour it. Go figure.

If you’re looking for ways to impress guests with cheese knowledge while serving them up a unique take on macaroni & cheese, this is the book for you!  How could you go wrong with Taleggio, mushrooms, pasta & truffle oil?? I added a bit of arugula to the site to cut the richness…and  to trick myself into thinking I’m being healthy. It kinda worked!

A couple of weeks ago, Joy & I got a little tour of  a cool company called Stitch Fix in San Francisco. Do you know about Stitch Fix? I’m kind of obsessed with it. If you love packages in the mail that include CLOTHES & ACCESSORIES picked out by a stylist JUST FOR YOU, you’re in for a real treat.

Trader Joe’s has a really good BBQ Chicken Salad that I was obsessed with UNTIL I read the back of the container and saw how many grams of fat were in it. GAH-REAT.  And that was for HALF the salad. There was a good week where I had that salad almost every single day at work. I couldn’t stop myself.

I’ve been wanting to make my own/healthier version of this salad for some time now and here it is! Instead of the heavy mayo based Ranch dressing, I used creamy Greek yogurt and mixed it with fresh lime juice and Sweet & Spicy Tabasco Sauce.  It adds a tangy sweet kick to the salad. If you have trouble finding that particular flavor, you could always add in a little bit of honey and regular Tabasco to mimic the flavor.  I also took away the shredded cheese because there’s so many flavors going on there that it’s seemed unnecessary!  I did add some avocado in it’s place though…oh and lots of cilantro!

It’s the perfect weeknight salad! And if you’re thinking of packing it up for work throughout the week, just make a bigger batch of dressing and take it with you. Dress as you need it! Also, be sure to add the tortilla strips (or chips!) at the last minute. No one likes a soggy bite of tortilla in their salad. NO ONE.
