Pasta with Braised Kale
I spend most of my commute home thinking about food. It's no joke. I try to remember everything I have in our pantry & fridge and make up recipes in my head while I'm cruising down the freeway. During tonight's commute, I thought I'd make more Kale Chips since I had 2 bunches of kale in the fridge but quickly abandoned that idea because Casey wouldn't be happy eating kale chips for dinner. Me? I could do it. No problem. Then I thought about making the Spaghetti with Braised Kale recipe I saw in Bon Appetit recently. The sheer simplicity of the recipe made that idea the winner. It is a Monday night after all. The last thing I wanna do is spend hours in the kitchen. A half hour after I got home, a very satisfying dinner was served.
Herbed-Baked Eggs

Our old neighbors brought us some fresh eggs from their chickens Friday night! Because these eggs are super special, I decided to make a fancy breakfast with them. My mom made us these eggs when Cooper was just a wee baby and I've thought about them ever since. The herbs, cheese and garlic are a wonderful addition to the eggs. You will delight in spearing the yolk with your toast because the combo creates a whole new dimension of garlic bread! Oooey gooey garlic bread!
Baked Kale Chips

I am totally jumping on the band wagon here and I really think you should too! Have you been seeing baked kale chips all over the internet like I have? There's definitely a good reason for the buzz. I finally made some today and I have to say that kale chips are exceptional! They are healthy AND crunchy, which equates to a guiltless snack.
Ever had broccoli rabe? Do you like the taste of dried toasted seaweed? You are in luck!

Buttermilk Cheddar Biscuits

I am not going to get wordy on this post. Just let the pictures speak for themselves.
Biscuits this good should be illegal. The addition of cheddar to the dough makes them utterly amazing.
The flavor? All I can say that it reminds me of a Cheez-It crossed with a buttery flaky biscuit.
Tangy, flaky, buttery goodness marbled with shreds of cheddar. Best when served hot!
I can't wait until you taste the bottom edge. You will thank me & Ina Garten for bringing this to your attention.

Pulled Pork Sandwiches

Vegans & vegetarians please divert your eyes. In fact, you might as well skip this post since it's all about meat. There's a lovely shot of coleslaw though! And that recipe is pretty awesome!
I don't really eat much meat anymore. It adds a huge weight to our grocery bill so I've been supplementing with beans and the like. Every now and then I get a craving for meat so I give in; this always makes the boys I feed SUPER happy.
Spinach Feta Pocket Pies

Awhile back I made these Chicken Pocket Pies and they were fabulous. The dough worked out perfectly, angels sang, and we left nothing but pie dust in the kitchen. Remember?
I've been "trying" to bring spinach back into Cooper's diet so I thought these Spinach Feta Pocket Pies might do the trick! Plus this momma loves spanakopita, and these are pretty similar (except they're made with cream cheese pastry instead of phillo dough).
I whipped up the pastry dough the night before using light cream cheese instead of full fat. I am soo happy to report that it tastes just fine! A bullet has been dodged, people. We can have a tasty lower fat pie crust and eat it too!
The spinach pockets were super. I was delighted every time I got a chunk of feta in a bite. Next time I am going to add a little more cheese to the filling. Oh man do I love feta! The pies totally satisfied my spanakopita cravings!
Creamy Artichoke Dip

For those of you who are on the Mayo=Yuck team like me, this is a nice treat!
What we have here is a cream cheese based artichoke dip! A guaranteed hit at your next dinner party!
Or if you are a member of my household, you would just call it "last night's dinner."
We sat around the dinner table just dipping stuff into it. *yum*
Casey REALLY loved it and was upset there wasn't more. A good sign indeed.
The recipe is very simple and open to interpretation. I have a hard time following recipes like this because it seems silly to measure parsley in a little tablespoon. I just added a small bunch in the processor. I think I got a greener than normal dip, but I loved the way it tasted so I am totally OK with that.
Quinoa & Avocado Salad with Dried Fruits

Quinoa Quinoa Quinoa! Fun to say isn't it? KEEN-WAHH!!!
I've had my eye on this salad for a week now. Doesn't it look good? I saw it posted at the kitchn and immediately saved it under the MAKE SOON file in my brain.
I am sucker for all things lemony so this lemon-cumin vinaigrette was a nice treat! The fruit and the almonds kick some serious ass too!
And let's direct our attention now to the star of this salad- the AVOCADO!
