I’m always trying to find interesting ways to get Cooper to eat green things for snacks. He’s more of a chip/cracker/pretzel/rice cake lover. I wonder where he gets that from? This little idea worked out brilliantly (although I would have added sriracha and avocado to mine) because it was savory and the cucumbers added a nice crunch. What you do is take a sheet of toasted seaweed, add a scoop of rice on top and a few slices of cucumber. Top with some toasted sesame seeds. Pair with some soy sauce + wasabi and add some sriracha for extra fun. Btw- The rice I used had just come out of our rice cooker so it was still kinda sticky and perfect for rolls.

Cooper and I are the artists of our house. We hang out at our kitchen table, put some music on, have some snacks and mix watercolors together. It’s a great way to break up the day and also a good way for me to chilllllllll out. I got pretty tired of coloring Star Wars and Superhero themed coloring books, so I started a little collection of adult coloring books to pull from when we’re coloring together. Some of them are so cool that Cooper asks to use my books. I make photocopies of some of the pages so we can both do one at the same time. If you’re looking for some relaxing fun, but you don’t have the right conditions to read a book, bust out some markers/crayons/watercolors and get your Art on! It’s the best kind of therapy.

Let’s top them with eggs, cheese and hot sauce! Or let’s see what else you have in the fridge that would go well with crispy potatoes. Pesto? Cool. Let’s do that. You’re gonna love how crispy the potatoes get in a waffle maker. Plus, it’s a set-it-and-forget-it situation. That means you can make yourself an amazing cocktail while your waffle maker does all the work. You can also get started on watching all the trashy TV a Monday night calls for. Hash Brown Waffles are in your future!
